Healthy, homemade dark chocolate cinnamon raisin almond butter cups aka – the perfect way to ease you out of the Christmas/Holiday cookie coma and back into reality.
In all honestly, I really wanted to share this recipe with you BEFORE the holidays but, the first batch somehow disappeared before I had a chance to photograph them (something I know nothing about . . . *wink, wink* #noregrets ) and then I blinked and now here we are?!

Me?! We stayed in and had an the best time just chilling (and eating all of the things) with the fam here at home. And, although the holidays came hard and fast, and I only just feel like I’m starting to get my mojo back, we truly had a wonderful time just relaxing and enjoying each other. As exhausting as it can be at times, it really is my favorite!
Speaking of favorites . . . you guys . . . these dark chocolate cinnamon raisin almond butter cups are about to be your new fave thing.
Decadent, rich, cool crisp dark chocolate cups encase a deliciously creamy, subtly sweet, lightly salted, caramel infused, cinnamon spiked almond butter filling that literally oozes with awesomeness when you bite on in!
Safe to say this year is NOT the year that I will be ending my obsession with DIY nut butter cups, if anything it may see it taken to a wholllllleeeee new level!
I ain’t mad about it! Not even a little bit!

3 ingredients, 10 minutes and all of this could be yours . . .
I mean, would you just look at that creamy, dreamy almond butter with those flecks of cinnamon and caramelized vanilla (thank you raisins) . . .
Swoon!
Note – If you don’t feel like making your own cinnamon raisin almond butter (or you don’t have a blender/food processor powerful enough to do so), you could always just sub in your fave store bought AB – add a pinch of cinnamon, a splash of vanilla and stir through some plump & juicy, raisins.
I am fortunate enough to have a food processor strong enough to create this magic and it’s something I truly enjoy doing but – do what you gotta do to make these happen because they really are edible awesomeness personified and you need them in your life because, YUMMMMMMM!

Dark Chocolate Cinnamon Raisin Almond Butter Cups
{Gluten Free, Dairy Free, Refined Sugar Free, Vegan, Keto & Paleo Friendly}Makes 10-12 Subtly sweet, perfectly spiced, deliciously indulgent, secretly healthy, creamy, dreamy, cinnamon raisin almond butter cups
Ingredients –
1/2 cup of healthy, homemade cinnamon raisin almond butter
1/2 cup of good quality dark chocolate
Flaky sea salt
Optional add-in;
1-2 scoops of collagen – (I use Vital Proteins) for a hit of protein and gut healing goodness
Method –
1 – Melt chocolate by your preferred method. I like to do mine broiler style by placing my chocolate in a small bowl over a pot of simmering water.
2 – Use a teaspoon to drizzle some melted chocolate into a chocolate mold (or can use mini paper or silicone cupcake/muffin cases if you prefer) and spread to coat evenly. Don’t use all your chocolate, remember you want to save about 1/4 of it to spread on top once our chocolate cups are filled.
3 – Place your chocolate cups in the fridge or freezer for 5-10 mins to set.
4 – Remove your chocolate cups from the fridge or freezer, fill each chocolate cup with a spoonful of your creamy, dreamy, cinnamon raisin almond butter, then use the back of your spoon carefully smooth out the top and firmly but gently press the filling down into the chocolate cups.
5 – Once all your cups are filled, top with a little extra chocolate, smooth it all the way to the edges to the filling is completely covered then sprinkle with salt and place them back into the fridge (or freezer) to set.
These delicious little cups will keep well in the fridge for several weeks but can also be stored in the freezer for 3-6 months!
