This stunning yet simple heirloom tomato salad is one of my favorite side dishes of all time!!

 

Sweet, juicy heirloom tomatoes, tangy “ricotta”, flaky sea salt, drizzled with Greek ranch, a splash of balsamic & tons of fresh herbs. It’s light, delicious and the epitome of summer. The perfect accompaniment to any meal although, to be honest, Ive been known to make & eat it all on its own! Yes, it really is THAT good!

The flavour combination is seriously incredible & the texture!!! Its hearty yet light, fresh, flavourful, sweet & salty with the perfect crunch! A party in your mouth!

Super simple, insanely delicious, the perfect way to elevate any meal!

Heirloom Tomato salad + Greek yogurt ranch

  • Prep Time: 5 mins
  • Persons: 4-6
  • Difficulty: Easy

  • Ingredients
  • For the tomato salad –
  • 4-6 heirloom tomatoes, sliced
  • 1 Tbsp Balsamic vinegar
  • 3-4 Tbsp Ricotta – I made my own macadamia ricotta – recipe below
    (if using store bought/plain ricotta add 1/2 tsp Garlic powder & 1/4 tsp Onion Powder + a pinch of salt & pepper)
  • Fresh basil &/or micro greens to serve
  • For the Greek yogurt ranch –
  • 1/2 cup plain greek style yogurt
  • 1 Tbsp good quality mayo – I use Gevity RX broth boosted mayo – it will change your life!
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • A sqz of fresh lemon juice (about 1/2 tsp)
  • 1/2 tsp dried dill
  • A pinch of salt & blk pepper to taste
  • 1-2 Tbsp water to thin dressing to desired consistency
  1. Instructions
  2. Make/mix your ricotta. Set aside.
  3. Make your ranch & set it aside.
  4. Arrange sliced tomatoes onto a serving plate
  5. Top your sliced tomatoes with random dollops of ricotta
  6. Finish with a drizzle of balsamic, ranch & a sprinkling of fresh herbs & a generous pinch of Spice Tub’s salad dressing mix  – or just some brown & yellow mustard seeds & a pinch of dried oregano.

Macadamia Ricotta

  • Prep Time: 10 mins
  • Persons: 1 C / 16 (1 Tbsp) serves
  • Difficulty: Easy

  • Ingredients
  • 1 1/2 Cups of raw macadamias
  • 1 Tablespoon of lemon juice (from 1/2 of 1 large lemon)
  • 1/2 teaspoon pink salt
  • 1/2 teaspoon of garlic powder
  • 2-3 Tablespoons of filtered water
  1. Instructions
  2. Place all ingredients into your food processor or blender – start with 2 Tablespoons of water and add more if needed.
  3. Process until smooth, creamy and well combined.
  4. Taste and adjust seasonings as needed. Set aside.
