The banana bonanza continues . . .
but this time I was ready and waiting for those babies to turn . . .
Some of you may remember a few weeks ago I was telling you about this ah-mazing new jam I scored in one of my GoodnessMe Boxes . . . seriously you guys this stuff is incredible!
The moment I cracked open that delicious jar of jam I was hooked . . . Im talkin’ eating it straight up with a spoon direct from the jar hooked #ihavenoshame
Although, it’s pretty much just fruit combined with some cheeky ch-ch-chia seeds (superfood say whhhaaattt?!) and it has 45% less sugar than other jam, nothing artificial just good, wholesome deliciousness so I’m totally ok with my shameless new habit.

Like I said, I am obsessed with this delicious little jar of jam, one taste and I knew I wanted to incorporate this deliciousness into some banana infused baked goods because mango, passionfruit and banana = match made in heaven so, here we are . . . are you ready?!
Mango, passionfruit and chia jam filled mini muffins for the win!!!!!!!!!!!!!
You guys these muffins are quick and easy to prepare coming together in under 20 minutes. Start to finish baby!
Simply throw your ingredients into your blender or food processor and let it do the work for you.
All you have to do once your batter is all blended (apart from try not to drink it straight up from the blender because it smells all kinds of incredible!) is spoon a little of your banana batter into your mini muffin tray, add a cheeky dollop of that seriously addictive jam then add a little more banana batter and bake those babies for 8ish minutes and you’re done baby!
From blender to belly in less than 20 mins!
They also happen to be all natural, made with no refined flours or sugars. Sweetened naturally with a those glorious, manky, over-ripe bananas, a splash of vanilla, a couple of magical medjool dates and a sneaky pinch of cinnamon.
The muffins themselves are super light, seriously moist, subtly sweet and just melt in your mouth.
And then comes the piece de resistance . . . that delicious, tropical inspired, jammy surprise . . .

Honestly, I think my head just about exploded with happiness when I saw (and tasted) how well these babies turned out!
I know they may not look like much but, these little muffins are in a world of their own when it comes to taste.
One bite and you will see . . . They are have an incredible, yet subtly sweet, caramelised banana flavour and a tropical inspired, citrusy, sweet jammy little centre.
They also happen to be low carb, grain free and paleo friendly so everybody wins 🙂
These delicious little muffins would make a killer breakfast served alongside some of that amazing coconut yoghurt we made last well, although they really are perfect all on their own.
Just grab a nice cup of tea or coffee and have yourself a blissful, jam filled, banana infused bite anytime your pretty little heart desires.
FYI – these muffins make the perfect addition work/school lunches and can I just say, if you pack a couple of these babies into precious little lunch boxes your family will love, love, love you for it. I’m talking – celebrations and street parades thrown in your honour, mom of the year nominations will be submitted on your behalf – these muffins are that good!

Mango, Passionfruit and Chia Jam Filled Banana Muffins
{Low carb, grain free & Paleo friendly}
Makes approx 30 subtly sweet, light as air, melt your mouth low carb, grain free and paleo friendly banana muffins with a deliciously sweet, tropical inspired, jammy little surprise inside.Ingredients –
2 manky over ripe bananas
3 eggs
2 medjool dates, seed removed*
2 teaspoons vanilla extract
1 Tablespoon of coconut oil, melted and cooled
1 Tablespoon of warm water
1 teaspoon of ground cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt flakes
4 Tablespoons coconut flour
4 Tablespoons of Henry Jones & Co – Mango, passionfruit chia jam (or sub your fave jam)
Method –
1 – Pre-heat your oven to 150’C (300’F) and either line a mini muffin tray with paper cases or grease and flour old skool style then set aside.
2 – Place all ingredients except that glorious jam into your food processor or blender and process until well combined.
3 – Spoon half a teaspoon of batter into your prepared muffin tray.
4 – Carefully spoon 1/2 a teaspoon of jam into the middle of each muffin, then add another 1/2 teaspoon of muffin batter and smooth to cover that delicious dollop of jam.
5 – Bake for 8-10 mins until slightly golden, tops spring back when gently pressed and a toothpick has just a few crumbs attached when inserted into the centre.
6 – Allow to cool in the tray for 5-10 mins then transfer to a wire rack to cool completely.
FYI – Leftovers can be stored in the freezer
