Alright party people, things be getting a leettle coco-nutty up in here today are you ready?

Today we are going to make ourselves some quick and easy, healthy, homemade vanilla coconut yoghurt!

Wait, wait don’t run away, it’s super easy – promise!

Just 3 simple ingredients and a few minutes in your blender and your done!

No fancy ingredients, equipment or tools required.

Seriously the hardest part about making this recipe is cracking open those coconuts. Which was surprisingly not as difficult as I thought it was going to be. We watched this super handy youtube tutorial before cracking into our lovely coconuts – if you’ve never done it before you might want to do the same. Super easy once you know how, honest.

So once your coconuts are cracked it’s yoghurt making time!

Simply pour your coconut water into a glass or jug and set it aside.

Next up we scoop out that lovely flesh . . . or is it meat? Either way feels kinda weird to say . . . anyways, scoop out that delicious fleshy/meaty, pearly white, coco-nutty goodness and place it into a bowl or just onto your chopping board.

Trim off any remaining membranes – it kind of looks like wet cardboard on the edges of that delicious white meat. Once trimmed simply place your freshly harvested coconut into your blender (I had about 2 heaping cups) add 1/2 a cup of coconut water, a splash of vanilla then blendy mcblend to reach your desired consistency.

Now, if you want to take things a step further (as I did) you can add a probiotic capsule which will give you all those good for your tum cultures and beneficial bacteria that you get when eating regular/Greek style yoghurt.

I was surprised at how mellow the flavours were. Especially compared to dried and shredded coconut which has such a strong flavour, that I adore but, the flavour of fresh coconut is much more subtle.

It’s not tart or sweet at all. If you prefer a sweeter yoghurt you could add in a little stevia or even some maple syrup or honey but I (we) really enjoy it just as it was, straight up in all its creamy dreamy, mellowed out, vanilla infused glory.

Gah it’s just so good!

And how cool is it that we just made our own yoghurt?! No fancy equipment required!

No weird preservatives or fancy ingredients – just good stuff!

It’s true, here are just a few of them –

Although coconut is quite sweet naturally, it’s low in sugar. Less than 3 grams per 1/2 cup!

Coconut is also high in fibre and packed with potassium!

Also, coconut oil is naturally high in lauric acid which helps to boost immunity as well as assist the body in fighting many a nasty virus or infection. Research shows that people who frequently consume coconut and coconut oil are sick less often than those who don’t!

Safe to say I am coco-nutty for coconuts and our little family is seriously obsessed with this homemade vanilla coconut yoghurt and I think you will be too!

Homemade Vanilla Coconut Yoghurt {Dairy Free, Vegan & Paleo Friendly}
Adapted from Pete EvansFamily Food Cookbook
Makes approx 1 1/2 cups of light and creamy, silky smooth, subtle sweet, mellowed out vanilla spiked coconut yoghurt

Ingredients –

2 whole young coconuts (both the meat – approx 2 cups and water – approx 1/2 cup)

1 Tablespoon of vanilla bean extract (or the beans scraped from 2 whole vanilla beans or just straight up vanilla extract although you won’t get those pretty flecks of vanilla)

1 probiotic capsule (optional)

Method –

1 – Open your coconuts and pour the coconut water into a large jug/cup or bowl

2 – Using a spoon, scoop out the coconut meat (or is it flesh?!) and place into a large bowl. FYI – I ended up with approx 2 heaping cups.

3 – Using a small sharp knife, remove any residual coconut skin (it looks a little like west cardboard attached to that beautiful white coconut meat/flesh.

4 – Place your trimmed coconut flesh into your food processor or blender .

5 – Add vanilla along with 1/2 a cup of your coconut water and blend until smooth and creamy. Add more coconut water to reach your desired consistency.

6 – Add probiotic capsule if using then blend again to combine.

7 – Pour yoghurt into a glass jar, cover with paper towel and set aside at room temperature for 6-12 hours. This allows to probiotics to do their thang. Breaking down the yoghurt and making all that deliciously good for you bacteria. The longer you leave your yoghurt to sit the tangier it becomes apparently. I left mine for 8 hours and it wasn’t very tangy at all. Just smooth and creamy with a nice hint of vanilla so if you prefer a tangier yoghurt let yours sit the full 12 hours 😉

8 – Transfer to the fridge until ready to enjoy.

9 – Eat it straight up by the spoonful, add it to your smoothies, serve it with fruit, this amazing (grain free) “granola“, drink it with a straw . . . eat it on all of the things
