Hi, My name’s Emma and I’m addicted to no-bake energy bites.
I know, I know we just made those delicious little, pretty in pink strawberry and cream cashew cookie bites last week but what can I tell ya, those babies lasted a whole 5 minutes and, well mama needed more!
So . . . .after talking to sweet sister of mine who just told me about these ah-maze-ing gluten free, Almond flour snickerdoodle cookies she had made, I knew what had to be done. I had to create my very own 5 minute, no-bake, clean eating, snickerdoodle energy bites! Because when the cookie craving strikes, who has time to wait around for the oven to pre-heat? Not this girl thats for sure – Ain’t nobody got time for that!!
Oh and just quickly, for those of us who are new to the snickerdoodle let me get you all caught up, a snickerdoodle is basically your trusty old sugar cookie spiced up with a good dash of cinnamon. Pretty simple really but they are so, so good. You know what they say, less is more.
And let me tell you, these Healthy, No-Bake Snickerdoodle Energy Bites are so much better than I imagined they would be.
Buttery cashews are combined with naturally sweet, deliciously chewy, caramel infused, medjool dates, a splash of vanilla, a sprinkling of cinnamon and a pinch of salt. That’s it! Talk about simple. Why had I not thought of this before?
Simply throw everything into your blender or food processor, blend/process until you have yourself a deliciously sticky little “ball” of cinnamon spiked, buttery sweet, cashew cookie dough and you are ready to rock and roll baby.
Literally, just pinch off some dough (I use approx 1 heaping teaspoon per bite) – roll, eat and repeat.
No need to risk burning your pretty little mouth because you can’t wait for your cookies to cool before you inhale enjoy them. And when I say you I mean me obvs, (#ihavenoshame) but we’ve all been there right?! #truth

Healthy, No-Bake Snickerdoodle Energy Bites
Makes approx 35 healthy, simple, buttery, sweet, cinnamon spiked bites of energy packed deliciousnessIngredients –
1 cup cashews (I used raw, unsalted)
6 medjool dates, pits removed
1 teaspoon of vanilla extract
1/2 teaspoon of ground cinnamon
a pinch of salt flakes
Method –
1 – Place cashews in your food processor/blender and pulse until crumbly, you want there to still be a few bigger chunks to give the bites some nice texture.
2 – Add dates and pules until the mixture starts to come together into a sticky, loose “dough”.
3 – Add vanilla extract, cinnamon and salt flakes and pulse again until combined.
4 – Using your hands, roll approx 1 heaping teaspoon of cookie dough into little bite size balls then transfer to your mouth an airtight container (or even just a ziplock bag) and store in the fridge required ← that’s right, I said required. These bad boys are a need, not want people!

Would this work with pecans or almonds? I’m not a big fan of cashews and have never made something like this before.

I haven’t tried this recipe with anything but cashews so I can’t say for sure but I feel like you should be able to sub in any nut (or a combination of your faves). I have made other energy bites using almonds and think they would definitely in place of cashews here. They may taste a little different using other nuts too, give it a shot and let me know how they go 🙂
