Delicate and light with a slight crumble, add a good scoop of your favourite ice cream . . . heaven!

I love, love, love brown sugar! It adds such a subtle sweet caramel flavour. Then theres the Jaffa’s . . . they give a hint of chocolate orange . . . kind of reminds me a little of old fashion madeira cake.
Total old school comfort flavours.
That’s just how I roll yo.
So before I get all ghetto gangster on you . . . go make this cookie cake and eat a big ol’ slice.

Giant Jaffa Cookie Cake
Serves 8Ingredients
1/3 cup unsalted butter, room temperature
1/3cup packed light brown sugar
1 egg
1 teaspoon vanilla extract
1 cup plain flour
1/2 teaspoon cream of tartar
1/2 teaspoon baking soda
1/8 teaspoon salt
1/8 cup Jaffa’s (could substitute m&m’s or chocolate chips)Optional (but recommended) to Serve –
Vanilla Ice cream
Extra Jaffa’sMethod –
Preheat oven to 175’C (350’F)
Place butter in a medium bowl.
Add brown sugar and beat until well combined.
Add egg,
and vanilla and beat for 1-2 minutes, until well combined.
Sift flour, baking soda, cream of tartar and salt and beat until well combined.
Place Jaffa’s in a small zip lock bag and whack them with a rolling pin (or weapon of choice) to break them up like so ↑
Add crushed Jaffa’s to cookie dough and stir to combine.
Spread cookie dough into a 9in pie/cake pan.
Bake for 15-20 mins until deliciously fragrant and golden brown.
Cut yourself a slice . . . anyone else see pac man??
top with a scoop of your favourite vanilla ice cream and some extra crushed Jaffa’s.
