We have been having some seriously gorgeous weather here in Sydney the last few weeks. Absolutely stunning!
So plans were made to have a massive morning play session at the park.
Mother nature clearly had other plans.
The weather man said we were in for some serious rain and even though it was cloudy and overcast looking I had my doubts, you know what they say . . . never trust a weather man. Who are “they” anyway . . . This time, “they” were wrong and the weather man was oh so right!
So. Much. Rain!
Booooooooo rain, booooooooo ruining our fun like that.
So what’s a girl to do?
She bakes cookies that’s what!
Not just any ol’ cookies, Coconut Choc Chip Oat Cookies!
Just what you need to drown your sorrows on a sad, sorry, soggy day.
These cookies are hearty, healthy and all kinds of delicious.
Simple to make, just one bowl required, a handful of ingredients that I am sure you have already on hand and 15 mins in the oven. Boomshakalocka, done!
Fresh from the oven these cookies are crispy and crunchy and studded with deliciously melty ooey gooey choc chips I mean what’s not to love?
The following day they soften up a little and the flavours really mellow and settle into each other. I can’t even explain it, so, so good!
These cookies are super, super healthy. Low GI made with old fashioned rolled oats, no added sugar sweetened simply with a little coconut, vanilla and some maple syrup and antioxidant rich thanks to the dark chocolate chips. Guilt free and no post cookie sugar coma to contend with, love, love, love ♥
Although they are all kinds of healthy you would never know it. One bite and you will be hooked. Line and sinker baby!
These cookies make the perfect rainy day mid morning or afternoon treat. The perfect post dinner indulgence or even crumble a few into a cup full of Greek yoghurt and you have yourself a killer breakfast or pre/post workout snack.

Rain, hail or shine you need these cookies! Bake, eat, love – you know you wanna
Coconut Choc Chip Oat Cookies
Slightly adapted from this recipe by the incredible Teresa Cutter
Makes approx 19 mini cocolicious choc chip oat cookiesIngredients –
1 cup rolled oats
1/2 cup desiccated coconut
1/2 teaspoon baking soda
1 teaspoon baking powder
Pinch of salt
1 egg
2 Tablespoons of Maple syrup
1 teaspoon of vanilla extract
1 teaspoon of coconut oil, melted and cooled
3 Tablespoons of Dark chocolate chips, roughly chopped
Method –
1 – Preheat oven to 160’C (320’F) and line a baking sheet with parchment/baking paper (or a nonstick/silpat mat) and set aside.
2 – In a medium size bowl combine your oats, coconut, baking powder, baking soda and salt and stir to combine.
3 – Add egg, maple syrup, vanilla and coconut oil and stir to combine. Allow to sit for a minute or 2 to allow the oats to soak up some of the moisture.
4 – Add you chocolate chips and stir to combine.
5 – Taking about a Tablespoon of cookie dough at a time shape into delicious little mounds and using damp fingers pat to form desired size and shape. They don’t really rise or spread during cooking so be sure you have them looking how you want them before they go into the oven.
6 – Bake for approx 15 mins until slightly golden and crispy on the edges. They are quite fragile little things so handle with care.
7 – Allow to cool completely before transferring directly to your mouth to an airtight container (or ziplock bag) where they should keep for up to 1 week . . . if they last that long.

Im so glad to hear you love them. Unfortunately I don’t have the nutritional information but you could easily get it using an app like myfitnesspal . Either enter the ingredients manually or just upload the recipe link
