Ugh you guys . . . this last weekend I had to go and have a blood test.
Not cool I tell you, not cool at all!
Can someone tell me why you can’t make an appointment to get your blood taken?
Seriously?
All that sitting around . . . waiting . . . stomach growling . . . trying not to sit to close to people in case they have some crazy super contagious reason to be there waiting to have their blood taken . . . trying not to touch anything . . . trying to keep your 3 year old quiet and occupied to stop all those seriously hungry . . . possibly seriously sick people from giving you the stink eye . . . or chewing off your arm just to teach you a lesson . . . you know because they are so hungry from all the blood test fasting . . .
Ugh – so not cool!
While I was waiting I saw a girl a few seats over reading some family friendly food magazine . . . not wanting to touch anything you know . . . germs and all that . . . I did manage to sneak a little peak at a few recipes she was eyeing off.
Which was like torture. So, so hungry!
Hurry up and take my blood already!
Finally the number before mine gets called, yahoo – the nightmare is almost over. I can get out of this germ infested blood bank and make me some pancakes!
No such luck people . . . the guy before me decided to faint!

These pancakes though, unbelievable! Totally worth the nightmare I tell you. Ah-mazing!
Now, being that it’s “test it out tuesday” and all sadly I can’t tell you what magazine these pancakes were from because I didn’t actually get to see the cover, and I’m not even sure how close to the recipe they would even be. Im my food deprived state all I saw were pancakes and the word banana . . . the rest my friends I just kinda made up as I went along.
But these pancakes are magic.
So stinking good!
Slightly sweet, super fluffy add some maple syrup and you my friend will be in heaven.
P.S They are totally healthy. Big time. But no one will know – soooo good!

Banana, Brown Sugar and Ricotta Pancakes
Makes 12 (4 inch) pancakesIngredients –
1 cup flour (I used Bob’s Red Mill whole wheat pastry flour but regular plain flour would be fine too)
1 cup milk (I use skim)
1 egg
1/3 cup Ricotta (I use Perfect Italiano extra light)
1 small banana
1 tsp vanilla extract
1 Tbsp brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt flakes
Optional but seriously recommended for serving –
Maple Syrup
Method –
Place a fry pan over medium heat, you want it to get nice and toasty ready to work when your batter is ready.
In a medium bowl place milk, egg, ricotta, banana and vanilla and (note slightly creepy smily face ??!!) use a fork to mash and stir until combined.
Sift flour, baking powder, baking soda, sugar and salt over your milk/ricotta mix
and stir until combined.
Pour batter into your preheated fry pan (I use 1/4 cup measure per pancake) and cook until edges look slightly dry and bubbles have formed on the surface.
Flip your pancakes and cook for a minute more.
Flipping fail . . . always happens on the first pancake . . . does that happen to you too – annoying?
Once cooked, transfer your pancakes to a plate, stack and repeat
Pile as high as your belly dictates and enjoy with a good pouring a maple syrup. Use the real stuff people . . . your worth it 🙂
