So I no longer allow the over ripe banana to irritate me. I choose to accept it as a proposition . . . a challenge if you will.

I now see it as if the banana is throwing its duelling glove into the ring, daring me to come up with a new way to use this otherwise wasted snack food.

This week I may have come up with my all time best yet use for this poor, sad little fellow . . . Banana Bread waffles!!

Holla!

Yes dear friend you read that correctly, I said banana bread waffles. A dangerously delicious combination.

While I was making these wonderful waffles my senses went into overdrive. My nose was telling my taste buds – “get ready you guys, banana bread is baking, woohoo . . . do wannnntttttt!!!”

My logical mind however was saying, “wait, hold up there you crazy sense of smell and taste . . . we aren’t making banana bread, we are making waffles?!”

All I can tell you is these waffles are totally worth the sensory confusion. They taste so good just as they are straight from the waffle iron. Add a little butter if you like, why not right? Or a super healthy breakfast just add some plain yoghurt and fresh slice bananas – YUM!!

Or my all time fave – a little dream whip (or whipped cream, or plain yoghurt) some fresh strawberries and a sprinkling of this ah-mazing cocoa hazelnut granola. Seriously, I die! So unbelievably good!

Seriously!!!!

Consider that duelling glove official thrown my friend, accept the challenge and enjoy the delectable reward.

Ingredients –
Adapted from this recipe at Lauren’s Latest
Makes 12 waffles

1 cup milk (I use skim)
1 egg
1 teaspoon vanilla
1 very ripe banana, mashed
1 1/4 cups plain flour {wholewheat pastry flour would work too)
2 tablespoons brown sugar
2 teaspoons baking powder
1 tsp baking soda
1/4 teaspoon salt
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg

Method –

Preheat waffle iron according to manufacturer instructions.

In a medium bowl sift flour, baking powder, baking soda, brown sugar, cinnamon, nutmeg and salt.

Add milk,

vanilla,

egg,

stir to combine.


Peel manky banana and place in a small bowl.

Show it whose boss and give it a good, good mashing!

Add beaten mashed banana to batter,

stir until just combined.

Pour spoonfuls of batter into the waffle iron (I use 1/4 cup measure) and cook according to manufacturers direction.

Once cooked (can’t you just hear the angels rejoicing?!),

place on a wire rack to cool if not being enjoyed immediately. Remember you can freeze these for future waffle emergencies enjoyment 🙂

and enjoy them I know you will . . . with yoghurt and sliced banana, topped off with a drizzle of maple syrup and a sprinkling of walnuts.
