Alright party people I hope you’re ready to get your veggie burger on because that, sweet invisible internet friend of mine is what we are going to do today!
Light, fresh, golden, crispy, hearty, healthy, perfect spiced, oven baked chickpea burgers because –
1 – After tasting that insanely delicious sweet chilli sauce that we made on tuesday I knew the flavours I had in mind for this quick and easy veggie burger would be a total winner!
2 -After taking a little peek into my pantry I discovered I have been hoarding chickpeas like no tomorrow!
Not even kidding?!
So many chickpeas!!!!!
Brace yourself people I have a feeling we may see a few more chickpea recipes in our future. You have been warned 😉
Anyways enough of my waffle and onto our veggie burgers!
These burgers may be super quick and easy to make but you guys, they are packed with layers of flavour that will blow your pretty little mind!
First up we have a layer of spice, the classic, aromatic combination of ground cumin and coriander is teamed with some fresh garlic and a little chilli to really gives these veggie burgers an intense but subtle depth of flavour that goes so perfectly with our chickpea base.
Next we have a hint of sweetness from one sweet red (spanish?!) onion and our juicy, sweet deliciously fresh red capsicum (pepper).
Then we balance things out with the subtle tartness from a dollop of Greek yoghurt and a hint of freshness from a squeeze of lemon juice which helps to cut through the spice and keeps our burgers light and fresh.
Last but not least you get a hint of nuttiness from a sprinkling of sesame seeds as well as a nice little crunch from our cheeky little ch-ch-chia seeds.
Layer upon, layer upon, layer baby! Love, love, love it!
If you follow along in Instagram you will already know that I served my burgers low-carb style, just on a couple of baby cos lettuce leaves then topped them with avocado, tomato, and a dollop of our healthy homemade sweet chilli sauce and a splattering of Greek yoghurt.
I also threw on a few extra cheeky little chilli slices and a sprinkling of fresh coriander and oh my deliciousness, you guys talk about a flavour explosion!!!!!

Spiced Chickpea Burgers
Makes 6 healthy, hearty, sweet spiced, seriously delicious chickpea burgersIngredients –
1 x 400g can of chickpeas, drained and rinsed
3 cloves of roasted garlic 1 small red onion, finely chopped
1 small red capsicum (red pepper) finely chopped
1 small red chilli, finely chopped (with or without seeds depending on how hot you like things)
1 heaping teaspoon of ground cumin
1 heaping teaspoon of ground coriander
2 cups of baby spinach
1 Tablespoon of sesame seeds
1 Tablespoon of Chia seeds
1 Tablespoon of Greek yoghurt
Juice from 1/2 a lemon
Optional but recommended for serving –
Lettuce
Tomato
Avocado
Fresh coriander (cilantro)
Chilli
Greek Yoghurt
Method –
1 – Place your chopped onions, garlic, capsicum (pepper) and chilli in a fry pan along with a drizzle of coconut or olive oil and place over medium-high heat.
2 – Cook for 3-5 mins stir occasionally until slightly softened and cooked through.
3 – Add spinach, turn off/remove from heat and stir to combine then set aside to cool for a couple of mins while you get your food processor/blender out.
4 – Place chickpeas, cooked spinach/onion mix along with your Greek yoghurt, cumin, coriander, sesame and chia seeds along with a good pinch of salt and pepper.
5 – Process until just combined. You don’t want to turn it into a paste sop just a few pulses should do it. You want there to be some texture to your burgers.
6 – Transfer to a bowl and cover then refrigerate for 10 mins to allow too mixture to settle and bind.
7 – Preheat your oven to 175’C (350’F) and line a baking tray with baking/parchment paper and set aside.
8 – With clean, slightly damp hands take approx 1 heaping 1/4 cup of your burger mix at a time, shape into even size patties and place on your prepared baking sheet.
9 – Place in the oven and cook for 10-15 mins until the edges are slightly crisp and deliciously golden brown.
10 – To serve, place one of your deliciously crispy, golden chickpea burgers in a lettuce leaf (or 2) top with some freshly sliced avocado, a few slices of baby tomato then sprinkle over some fresh coriander and a few extra slices of chilli and finish with a few delicious dollops of sweet chilli sauce.
