I don’t know what is going on but sleep . . . it’s becoming a problem.
Like for reals . . .
I fall asleep on the couch anywhere between 930 and 10pm (yes I’m really 80 years old) so I drag my sorry self off to bed only to lay there . . . wide awake . . . for hours!!!!!!!
Like, I’m talking a good 3 hours!

What is going on?
Please tell me this has happened to you and that you have the magic cure because I am starting to lose my mind! Big time!
Although . . . all that laying awake trying to get me some decent shut eye leaves me to dream about the breakfast that is rapidly approaching . . .

So the whole sleep issue not so bad while I’m enjoying my delicious (not to mention totally healthy) breakfast waffles.
I mean waffles = winning
Especially when they are perfectly crispy on the outside, light and fluffy on the inside. Did I mention they are seriously healthy, with their bananas and wholewheat flour then scattered with the delicious little antioxidants we totally need from the chocolate chips . . . Oh and don’t forget the protein from the Greek yoghurt.
It’s totally health food. Like negative calories or something

Oh and if you don’t have a waffle iron we can no longer be friends your crazy and need to go get one asap you can totally just make these in a fry pan or skillet as pancakes. Either way you need them . . . like now.

Healthy Wholewheat Banana Chocolate Chip Waffles
Makes approx 16 small wafflesIngredients –
1/2 cup milk (I use skim)
1/2 cup plain Greek yoghurt (I use Chobani 0%)
1 egg
1 tsp vanilla extract
3/4 cup plain flour
1/2 cup whole wheat pastry flour (or an additional 1/2 cup plain flour)
1 manky overripe banana, mashed
2 Tbsp Brown sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt flakes
3/4 tsp cinnamon
1/2 tsp nutmeg
3 Tbsp chocolate chips
Method –
Preheat waffle iron according to manufacturer instructions.
In a medium bowl sift flour, baking powder, baking soda, brown sugar, cinnamon, nutmeg and salt.
Add milk, vanilla, egg and stir to combine.
Peel manky banana and place in a small bowl.
Show it whose boss and give it a good, good mashing!
Add pulverised mashed banana to batter and stir until just combined.
Last bout not least, fold through chocolate chips.
Pour batter into the pre-heated waffle iron (I use 1/4 cup measure) and cook according to manufacturers direction.
Once cooked, place on a wire rack to cool if not being enjoyed immediately. Remember you can freeze these babies and just pop them in the toaster for future waffle emergencies enjoyment 🙂
