Today I don’t really have a traditional recipe for you as such, it’s more a bites of real life kinda post.

This sweet invisible internet friend of mine, is my current lunch time obsession.

Please tell me that I am not alone in a lunch time obsession? Please tell me you do it too? Fall in love with one particular lunch (or breakfast or dinner for that matter) and it’s all you eat for months on end?

This obsession all started a few years ago when we went on our annual family vaycay to our beloved Denver Colorado. Every time we go we always, always have lunch (and coffee and cake) at least once at The Market at Larimer Square. If you find yourself in downtown Denver or close enough by to stop in I insist you do it. You will not be sorry. Ah-mazing sandwiches/wraps, incredible salads and a killer selection of hot/homestyle meal options as well as a huge breakfast selection. Oh and did I mention the cakes . . . No words . . . I can’t even! (seriously, check them out!)

So anyways, every time we go to The Market for lunch I get their incredible veggie wrap and once we got back from I trip I was craving my veggie wraps like a pregnant woman craves pickles (←and calm yourselves, no I am not pregnant!!) so I did what anyone would do . . . I made my own.

This simple avocado salad wrap just hits all the right spots. It’s light, fresh, crispy, crunchy, sweet and salty all wrapped up into one perfect little tortilla.

I just can not get enough. I’m also loving these protein enriched tortilla wraps, have you tried them? So good! Not dry like some tortilla wraps can be you know? And FYI, they make a killer lazy girls (or guys) pizza base too #justsayin

Feel free to add some meat/protein to your wrap if you feel the need, grilled chicken, eggs, tuna, tofu (←if your cah-razy ;)) it’s all good.

Oh and if wraps aren’t your thang you could totally make this simple avocado salad wrap into a simple salad sandwich, just sub in your fave bread . Do what you feel people, make it your own. If you prefer bread I highly, highly recommend this sourdough if you can get your hands on some. Sonoma makes the best sourdough! The Miche (wholewheat) is my all time fave!!!

So lunch . . . you should definitely have some. I know what Im having, come on over I’ll make you one too.

This Simple, Avocado, Salad Wrap, is quick, easy, healthy, totally satisfying and all kinds of delicious.

The perfect lunch.

Simple Avocado Salad Wrap
Makes one, sensationally simple satisfying salad wrap

Ingredients –

1 large tortilla (I use these protein enriched tortillas)

1/4 of an avocado (more or less to taste)

1/4 of a large carrot, very thinly sliced

4 grape tomatoes, quartered

3 sliced of beetroot, patted dry

1/8 cup of alfalfa sprouts, rinsed and dried

1/2 cup mixed salad leaves

Salt and pepper to taste

Method –

1 – Spread avocado over the tortilla.

2 – Season with salt and pepper to taste.

3 – Top with salad leaves followed by alfalfa sprouts, carrot, tomatoes and beets.

4 – carefully roll up your delicious, simple salad wrap and inhale
