Salt and Vinegar {oven baked} Kale Chips

Hey there!

I made you a snack . . .

An insanely delicious, seriously healthy, dangerously addicting snack.

It’s light and crispy and salty and sweet and I am head over heels in love with it.

Today, sweet invisible internet friend of mine, we are making ourselves a big ol’ batch of kale chips!

But not just any ol’ kale chips, today, we are kicking things up a notch by adding in a drizzle of balsamic vinegar. A few days ago, out of nowhere I got this massive, punch in the face,  craving for salt and vinegar chips and while I was out and about hunting down a giant bag of salt and vinegar chips running errands I saw this glorious bunch of kale, that just happened to be on sale, and it hit me . . . salt and vinegar kale chips! Want, need, must have!

And let me just tell you, these salt and vinegar kale chips totally hit the spot!

These delicious little oven baked salt and vinegar kale chips are so light and crispy. I love the punchy, salty/sweet element that the vinegar brings to the table. Makes my jaw water just thinking about it. So, so good!

When you eat them you get a killer crunch and then somehow, like magic they just melt away in your mouth and leave you wanting more . . .

The sharp sweetness of the balsamic vinegar mixed with the slight, natural pepperiness of the kale is just absolute perfection and I mean come on who doesn’t love a good salt and vinegar chip?!

And these salt and vinegar chips are a snack you can feel really good about eating.

Did you know –

– Kale is a known anti-inflammatory, which helps to fight against arthritis, asthma and autoimmune disorders.

– Kale is also high in vitamin A which is great for your eyes and skin, it’s also super high in fibre, folate and magnesium!

– Kale is high in iron, and vitamin C which in itself is a powerful combination. Did you know that your body absorbs iron more easily when paired with vitamin C? Well now you do ;)

Salt and Vinegar {oven baked} Kale Chips

Salt and Vinegar {oven baked} Kale Chips
Makes approx 2 heaping cups of crispy, crunchy seriously addicting salt and vinegar kale chips

Ingredients –

2 cups (firmly packed) of  kale, washed and dried

1 teaspoon of balsamic vinegar

1 teaspoon of coconut oil, melted and cooled

salt flakes to taste

Method –

1 – Preheat oven to 120′C (250′F). Line a large baking tray (or 2) with baking/parchment paper and set aside.

2 – Remove the middle stalk from the kale leaves and cut into smaller pieces (the size you want your chips) and place into a large bowl.

3 – In a small bowl or jug whisk together coconut oil and balsamic vinegar until well combined.

4 – Pour oil/vinegar mix over your kale leaves, add a good pinch of salt then toss to coat, gentle massaging all that incredible flavour into those pretty little leaves as you go.

5 – Place kale leaves in a single layer on your prepared baking tray.

6 – Bake for 10-15 mins or until slightly browned and nice and crispy.

7 – Devour Serve immediately or, store in an airtight container (or even just a large ziploack bag) for up to 2 weeks (as if they will last that long;))
