Last week it was my little cutie darling girls 3rd birthday!

Birthday’s are a pretty big deal in our little family. We have what I fondly refer to as “birthday week”. Basically for the week of your birthday its alllll about you. Anything special you want to do, eat etc . . . within reason of course, you get.

My darling girl is cah-razy about pizza.

Girlfriend loooovvvveeees a good margarita pizza.

Who doesn’t?

So I had the perfect excuse to bust out Ree’s recipe book and test out her pizza dough. Ladies and gentlemen we have ourselves a winner.

This pizza dough is the bomb. Everyone knows the best way to test out a new pizza place or pizza dough recipe is with margarita. It was so stinking good! I can not wait to test out some of P-Dub’s other pizza recipes.

I’m thinking we may go with “test it out tuesday” pizza night for a few weeks. Are you in?

Of course you are, you know a good thing when you see it 😉

Your so smart.

This pizza dough is so easy to make, so easy to handle but out of this world delicious!

It rolls out so easily, you can have it super thin (which is my personal fav) and crispy or a little thicker if you prefer.

Whatever you do make sure you get your pizza on!

Pizza Dough
Makes 1 dough (I sectioned into 6 generously sized individual pizzas)
Re-written as appears in The Pioneer Woman Cooks – Food from my Frontier

Ingredients –

1 scant teaspoon of active dry yeast
3/4 cup warm water
2 cups plain flour
3/4 tsp salt flakes
3 Tablespoons olive oil

Toppings I used (per individual size pizza) –

1 Tbsp Tomato paste (or 1 tomato roasted sprinkled with salt pepper, oregano and thyme  for 20 mins at 175’C/35-‘F then mashed with a fork)
1 slice cheese (I used coon light and tasty)
1 Tbsp feta (I used reduced fat)
1 Tbsp parmesan, grated

Method –

1 – Combine the yeast and warm water in a small bowl or jug. Allow it to sit for 10 mins.

2 – Add flour to the bowl of an electric mixer fitted with a paddle attachment.

3 – Sprinkle in the salt

4 – Turn the mixer on low, then slowly pour in the olive oil.

5 – Finally pour in the yeast/water mixture.

6 – Stop mixing when everything comes together. Transfer to a lightly oiled bowl and cover with plastic wrap. Allow the dough to rise 1 hour before using.

7 -Preheat oven to 250’C (500’F) and arrange the rack in the very bottom position.

8 – Roll out the pizza dough into a large oval shape and place it on a baking sheet.

9 – Spread sauce all over the surface of the crust.

10 – Arrange other toppings as desired.

11 – Bake for 12-15 mins if making one large pizza or 5-8 mins if making smaller individual size or until crust is golden and cheese is bubbly and hot.

Note – The dough can be stored in the fridge for several days before using.

Whats your favourite pizza topping?
