It’s been a regular feature on our dinner menu for months now. My little lady (6 going on 16!!) requests this meal pretty much every week and I happily oblige her requests, I mean why wouldn’t I?!

Not only is this teriyaki chicken seriously delicious but it’s just so quick and easy to throw together!

Minimum effort, maximum flavour is the name of the game!

Here’s how we make it –

All you have to do is pour your marinade ingredients into a bowl or even just a ziplock bag and give it a little stir to combine.

Add your chicken, toss to coat and set it aside (at room temperature) to marinate for 10-15 minutes.

Easy right?

Once you’re chicken has been infused with our healthy, homemade, sweet and salty teriyaki marinade you simply pop it into your skillet/fry pan, let it cook for 2-3 minutes each side and you’re pretty much done.

While your chicken is resting you’ll put together your light, fresh, sweet and spicy pineapple salsa and you’re good to go!

One super simple, seriously flavorsome, delicious, nutritious dinner done in well under 30 minutes!

Healthy Homemade Teriyaki Chicken with Sweet and Spicy Pineapple Jalapeno’ Salsa {Gluten Free & Paleo Friendly}

Serves 2 – 3

Ingredients –

For the chicken –

250g (8 ounces)  boneless, skinless chicken breasts (I used 2 large chicken breasts)

1/4 cup natural pineapple juice

4 teaspoons of tamari (could possibly sub coconut aminos or even soy sauce if not gluten free/paleo)

2 large cloves of garlic, crushed

1 teaspoon of freshly grated ginger

A pinch of salt and pepper

For the salsa –

1 cup of finely chopped pineapple – preferably fresh but canned will work too

1 small red (Spanish) onion very finely chopped

1 green jalapeño chili pepper finely chopped – more or less to taste with or without seeds depending on how feisty you like your salsa

1/4 cup of coriander (cilantro) finely chopped

A squeeze of fresh lime juice – approx 1 tsp

Salt and pepper to taste

Optional but recommended for serving –

Healthy homemade Asian style BBQ sauce

Method –

For the Chicken –

1 – Place chicken onto a piece of parchment paper and give it a little pounding with a rolling pin (or implement of choice) to slightly tenderize, flatten out and ensure a thinner and more uniform thickness overall which will result in a quicker and more even cooking.

2 – Pall marinade ingredients into a small bowl (or even just a zip lock bag will work) and give it a little stir/shake to combine.

3 – Place chicken into your teriyaki marinade and toss to coat. Set aside for 10-15 minutes, at room temperature to marinate.  You can totally do this a few hours ahead of time too if you’re super organized.

4 – Place a large skillet or fry pan over medium heat, add a little extra coconut (or olive oil/ bacon fat or ghee/cooking oil of choice) and cook chicken for 2-3 minutes each side until cooked through.

5 – Remove chicken from heat and set aside to rest while you make your salsa.

To make the salsa –

1 – Place all ingredients into a small bowl and stir to combine.

2 – Taste and adjust seasonings if necessary.

FYI – It’s fine to make the salsa ahead of time just don’t add the lime juice until a few minutes before you are ready to serve as the acidity from the lime juice can cause the pineapple to break down a little after a few hours 😉

To serve –

Simply place a couple of heaping spoonfuls of your sweet and spicy pineapple-jalapeno’ salsa on top of your succulent, juicy teriyaki chicken, drizzle with a little Asian style BBQ sauce if desired and serve with a simple salad or your veg of choice.

You can serve it simply with a side of rice or cauli-rice and I highly recommend adding in with some good ol’ fashion green beans and some creamy, dreamy avocado (like so) – but do what you feel – make it your own 🙂
