Now I don’t know about you but this girl . . . sometimes I just need a big ol’ steak!

It’s kind of a new development for me. Well, when I say new I mean in the last year or so.

Growing up we didn’t eat a lot of steak in our house. I think one reason was because my parents, both born and raised in good old England grew up in low income families where steak was really considered something of a luxury item and definitely out of their price range.

That and the fact that I grew up in the world of performing arts, well dance mainly where there is that whole unspoken rule of  living on practically nothing but lettuce, or as my sweet grandma sugar used to say “clouds and wind pudding”. Ugh so not fun, and that my friend is no way to live.

Somebody pass me a big ol’ steak please?!

Then I met Ree. Beautiful, wonderful talented Ree who introduced me to her (now infamous in our house) chipotle steak salad! Seriously you guys we eat this bad boy usually once (or twice) a week. One bite and I. was. hooked!

Line and sinker baby! Can not get enough.

Although I should tell you a dear, dear friend of mine eats steak for breakfast. Everyday. With cashews. I love me some steak and I love my girl, but sorry girlfriend I’m just not there yet.

Anyway enough of the little over share of slightly irrelevant background information into my life . . . let’s talk about today’s recipe.

Today our test it out tuesday recipe is from the one and only Jamie Oliver and his 15 minute meals cookbook (← not getting over that anytime soon, just so you know). This steak . . . choose your fave, good quality (aka best you can afford) steak, season with a little smoked paprika (← love) then simply sear your steak to your preferred level of doneness. I’m a medium/well girl just incase your ever making one for me. Then we simply dress our steaks in this incredible, slightly sweet, slightly, tangy, slightly refreshing dressing.

I could take a bath in this dressing. Well maybe not a bath but I definitely want to just rub my face in it. So unbelievably simple but so unbelievable good! Slightly sweet from the Dijon, slightly tangy from the lemon juice and slightly refreshing from the fresh parsley.

Spunky husband loves to have his steak made into the most amazing steak sandwich the world has ever seen, but its also incredible served simply with some salad greens with just a  few shavings of fresh parmesan. Ah-mazing. And clearly the whole lettuce leaf issue still haunts me just slightly . . . “ain’t nobody got time for that!” .

This my friend may very well be the best steak you ever did taste, we sure think so anyway.

Best Ever Grilled Steak
Barely adapted and re-written in my own words from – Jamie’s 15 minute meals Cookbook
Serves 4 +

Ingredients –

500g steak, visible fat removed

1 heaping teaspoon of smoked paprika

2 Tablespoons of flat leaf parsley, chopped

1 heaping teaspoon of Dijon mustard

Juice of 1/2 a lemon

Method –

1 – Finely chop your parsley, then either directly to the board or transfer to a plate, add mustard, salt and pepper and squeeze over lemon juice then stir to combine. Set aside

2 – Preheat your griddle/frypan over high heat, you want to get it screaming hot!

3 – Season steaks with salt, pepper and paprika and give them a good rub to make sure the spices really get in there.

4 – Place steaks into your screaming hot pan, Jamie recommends turning your steaks every minute until they are cooked to your liking.

5 – Transfer cooked steaks directly onto your mustard/lemon dressing and turn to ensure they get a good coating on all sides.

6 – Allow to rest for a minute of 2 before slicing, sprinkle with extra parsley if your feeling fancy then dive on in.

7 – Serve either as the best steak sandwich you ever tasted, or simple along with some salad greens and a few shavings of fresh parmesan.
