Oh my deliciousness, you guys . . .

Silky smooth, subtly sweet, lightly salted, DATE FREE , peanut butter caramel encased in  cool crisp, decadent and rich, dark chocolate coating that literally oozes with awesomeness when you bite on in.

They taste like a peanut butter version of those dreamy caramel rolo chocolates (another one of my childhood faves) which obviously makes them a million times better because caramel + nut butter always wins!

I don’t know about you but that sure sounds (and tastes) like heaven to me!

One thing you guys have made very clear is that you’d like me to keep coming up with more date free treat recipes.

Well, my friend, you ask, I deliver. You know how much I love you, right?!

And let me tell you, today I am delivering the goods!

I mean did you hear (or should I say read?!) me . . . secretly healthy , salted dark chocolate peanut butter caramels . . .

These dreamy little cups turned out even better than I even imaged !

I’m talking , head fall back, laugh out loud (all to myself) , then shake my head in disbelief before taking another bite , good

So I’m going to stop talking and let you go make them so you can experience the awesomeness for your fine self!

Our dreamy salted peanut butter caramels are super simple to make using just a handful of pantry staples that I bet you have on hand already and they come together in one bowl + one saucepan and can be ready to devour in less than 30 mins!

I should warn you though, making these cute little cups are a little more involved  than my usual nut butter cups because we have to melt the caramel together and then let it cool slightly before it gets nestled it in to it’s deliciously indulgent dark chocolate cup but I can assure you they are also, 100% worth it!

Straight from the fridge the filling sets nice and firm but if you let them sit  at room temperature for a while the filling gets a little softer and I can’t decide which I like more, they’re just so, SO good!

I mean would you just look at them?!

{DATE FREE} Salted Dark Chocolate Peanut Butter Caramels
Gluten Free – Dairy Free – Refined Sugar Free – Low Carb – Vegan – Keto – Paleo

Makes 8 large or 16 mini bites of blissful deliciousness

Ingredients –

For the salted caramel peanut butter filling –

1/4 cup peanut butter – or nut seed butter of choice

2 Tablespoons of coconut oil

2 Tablespoons of maple syrup

1/2 teaspoon of vanilla

A generous pinch of salt

For the chocolate topping –

1/2 cup (1 block) of good quality dark chocolate

1 teaspoon of coconut oil – optional

A pinch of salt + extra for serving

Method –

1 – Place all ingredients for your peanut butter caramel in to a small sauce pan, stir and gently heat until well combined.

2 – Set aside to cool.

3 – While your caramel is cooling, make your dreamy chocolate cups.

4 – Melt chocolate by your preferred method. I like to do mine broiler style by placing my chocolate in a small bowl  over a pot of simmering water.

2 – Use a teaspoon to drizzle some melted chocolate into a chocolate mold (or you can use mini paper or silicone cupcake/muffin cases if you prefer) and spread to coat evenly. Don’t use all your chocolate, remember you want to save about 1/4 of it to spread on top once our chocolate cups are filled.

3 – Place your chocolate cups in the fridge or freezer for 5-10 mins to set.

4 – Remove  your chocolate cups from the fridge or freezer, fill each chocolate cup with a spoonful of your peanut butter caramel then use the back of your spoon carefully smooth out the top and firmly but gently tap your cups onto a counter top to remove any potential air bubbles and smooth out the top.

5 – Once all your cups are filled,  pop them in the freezer for 5-10 mins to allow the caramel to get nice and firm before adding your final chocolate layer. You can just add it immediately but the chocolate tends to melt into the caramel. Freezing it first helps keep the layers separate. Worth the extra 5 mins I think.

^ – Once chilled/set – top your peanut butter caramel with a little remaining chocolate, smooth it all the way to the edges to the filling is completely covered then sprinkle with salt and place them back into the fridge  (or freezer) for 2-5 minutes to set.

These delicious little cups will keep well in the fridge for several weeks but can also be stored in the freezer for 3-6 months!
