We decided to call these firecracker chicken tacos because ;

1 – Your girl loves her spice (see below for subs for those of you who don’t feel the same)  &

I don’t think I’ve ever met anyone who does not love a good Mexican fiesta.

No matter what you choose to have – a taco, burrito (traditional or nourish bowl style), fajita, quesadilla, enchilada, tostada or even just a big ol’ bowl full of chips with a side of salsa and alllllllll of the guac.

It’s just so good!

So fresh and flavorful and it always feels like a bit of a celebration! Maybe that’s just me though?! Whenever we have a special occasion, family birthday or something to celebrate, my little lady (9 going on 19 !! ) always, always, ALWAYS requests we have a DIY Mexican party!

That could just be for all the chips and guac (that’s my girl) but hey, it’s OK by me!

And, let me tell you, these  20 minute crisp and crunchy, firecracker chicken tacos have taken my obsession with Mexican food to a whole new level and are 100% worth celebrating whenever you can make them happen – please let it be today!!

Succulent, tender, sweet and spicy, crisp and crunchy simply, sensational!

A Mexican fiesta in every single bite!

Super simple to put together – please don’t let the lengthy looking list of ingredients put you off, I promise you have 99% of these ingredients tucked away in your fridge and pantry this very moment – and it really is as simple as – coat, bake, assemble, devour!

You can absolutely do this and even on a weeknight!

Fuss free and flavorful = dinner done right!

First we marinate our chicken in a creamy, dreamy, zesty, spicy marinade  made with coconut (or Greek style yogurt) , garlic, onion powder, a dash of hot sauce (if you have little ones or,  don’t like spice then feel free to sub smoked paprika in place of the hot sauce) and some zesty lime helps to tenderize the chicken – it’s succulent, juicy and all kinds of incredible!

Then we have that crisp and crunchy coating.

I’m telling you, using crushed up tortilla chips to coat your chicken, or those inevitable crumbs at the bottom of the pack that always have you wanting to shove your head into the depths of bag to lick up every last crumb , you know you do it too = best idea ever!

It’s something I’ve been wanting to do for the longest time and the only regret I have is that I waited so long to make it happen!

FYI – for the ultimate crunch factor be sure to cook your chicken on a wire rack. This way the air can circulate and ensure all sides get nice and crispy. If you simply place on a baking sheet the bottoms will most likely be a little soggy, even if you flip them part way through, it’s just not the same. Please use a wire rack, 100% worth it because let’s be honest, no one likes a soggy bottom!

Ok, I think that’s it . . . mix, coat, bake, slice, load em’ up  . . . I told you it was simple!

Crisp & Crunchy {Baked} Firecracker Chicken Tacos

Makes 2-4 serves (depending on how many topping & chips & guac you have) of crisp & crunchy, seriously flavorful cracking chicken tacos.

Ingredients –

For the Firecracker chicken;

2 large chicken breasts (about 500g) could sub thighs vegan friends sub tempeh or tofu

For the marinade –

1/4 cup coconut or Greek style yogurt (often I just use this BBQ sauce – so good!)

1/2 teaspoon of garlic powder

1/4 teaspoon of onion powder

1 teaspoon of hot sauce (more or less to taste) sub smoked paprika for a non spicy version

Zest and juice from 1/2 a lime

A generous pinch of salt & pepper

1 teaspoon of Meadow and Marrow bone broth natural concentrate  – optional for gut healing goodness

For the crisp & crunchy coating –

2 cups of crushed tortilla chips – I love to use Siete Foods “Fuego” Grain Free Tortilla chips – can also sub almond meal

For serving –

Tortillas

Avocado

Cabbage

Mixed Greens

Jalapenos

Coconut or Greek style yoghurt

Extra hot sauce

Extra tortilla chips, always

Quick and easy homemade pico;

1 cup diced tomatoes

2 Tablespoons of fresh coriander/cilantro (but really measure that with your heart)

1 Tablespoon of finely chopped red/purple (Spanish) onion

A squeeze of lime

A generous pinch of salt & pepper

Method –

1 – Preheat oven to 175’C/350’F – spray a wire rack with avocado/coconut oil or brush with ghee and place over a rimmed baking sheet then set aside.

2 – In a small bowl, place coconut yogurt, hot sauce, lime zest, juice (broth, if using) & seasonings and stir to combine.

3 – Add chicken and toss to coat. Set aside preferably for 10 mins to allow it to marinate and tenderize the chicken.

4 – Place crushed tortilla chips on to a medium sized plate (or just in to a zip lock bag)

5 – Remove chicken from marinade, place on to the crushed tortilla chips, toss to coat and place onto your prepare rack.

6 – Repeat until all chicken is coated.

7 – Bake for 10-15 minutes until chicken is cooked through.

8 – Remove from the oven and allow to rest for 2-5 minutes then slice

9 – To serve – divide crisp & crunchy chicken between your tortillas , top with all of the things (extra avocado & hot sauce for me please)

10 – Devour!
