Seriously, I think I have a slight problem. I may be addicted to collecting cookbooks.

For reals!

These books my dear friends are the latest additions that do not fit into my book case. It may or may not be more than 6ft tall and 4 ft wide . . .

. . . What?!

Ok so it’s at the point now that I know I have a problem.

Admitting it is the first step right?

I have so many cookbooks, I adore each and everyone of them. I have the best of intentions to make each recipe I have carefully marked with a pretty pink post-it but now I honestly don’t know where to start.

So here is what Im thinking . . . I plan to try out one new recipe a week and share it with you guys.

My hope is that putting it out there in writing for someone, anyone, if only one person to read, will be enough to keep me accountable.

Now for the hardest part . . . where to start?

I think I will start with a recipe from one of my newest babies additions. It seems like as good a place as any right?

Plus its on top of the pile making it super easy to get to. Its the little things people, am I right 😉

So for those of you who want to play along at home, this week we will be cooking from The Pioneer Woman Cooks – Recipes from an Accidental Country Girl.

Now, if you are not family with the beloved Ree then you need to head on over to her website and get to know her. She is hilarious, one of a kind and boy can she cook. Like no other! She truly is an amazing woman. You need her in your life.

If you want to grab your very own copy of this book your life will be richer, your belly insanely and incredibly satisfied and your family would be forever thankful. Ree’s recipes really are out of this world delicious.

These meatballs are so good. They are not at all complicated and for the effort involved the flavour is out. of. this. world.

The meatballs themselves are so tender, they practically melt in your mouth. The sauce, Oh. my. word. The sauce is so good, like”I want to take a bath” in it good, well maybe not . . .  might bit a tad sticky, although seriously delicious . . . still maybe not the best idea. Although, I am sure once you taste it the thought may cross your mind.

You have been warned!

So anyway, enough chit chat. Make these meatballs already. Serve with a simple salad or some mashed potato and green beans. Your family (and your belly) will love love love you for it 🙂

BBQ Comfort Meatballs
This recipe re-written as it appears in The Pioneer Woman Cooks – Recipes from an Accidental Country Girl
Serves 6-8

Meatballs

1 1/2 lbs (680g approx) Ground beef (I used extra lean, heart smart)
3/4 cup quick oats
1 cup milk (I used skim)
3 Tbsp very finely minced onion
1 1/2 tsp salt
Plenty of ground black pepper

1/2 cup flour

Sauce

1 cup Ketchup
2 Tbsp sugar
3 Tbsp white vinegar
2 Tbsp Worcestershire sauce
4 to 6 Tbsp minced onion
Dash of Tabasco

Method –

1 – In a bowl combine ground beef and oats.

2 – Pour in the milk, then add diced onion and salt.

3 – Add the black pepper, then stir to combine.

4 – Roll the mixture into Tablespoon-soze balls and refrigerate them for 30-45 mins to firm.

5 – Preheat oven to 350’F (175’C). Heat some oil in a large skillet over medium heat.

6 – Dredge the meatballs in the flour.

7 – Brown the meatballs in batches until light brown.

8 – As they brown, place them in a rectangular baking dish.

9 – Stir together the sauce ingredients and drizzle the sauce evenly on the meatballs.

10 – Bake for about 45 min, or until bubbly and hot.

11 – Serve to any hungry human in your life. Delicious.
