After what feels like a lifetime of searching, experimenting and tasting unsuccessful recipe adaptations I think I finally have a winner. A strawberry scratch cake.

I am so excited about this cake. Honestly I can not tell to you how long I have been hunting, and trying to come up with the perfect strawberry scratch cake recipe. You see I adore strawberries and well I think its pretty clear how much I live for love cake.

This cake is, in my opinion, a perfect union of 2 of my greatest loves.

It’s light, fluffy, perfectly and refreshingly sweet in a way that only fresh (or frozen) strawberries can be. It keeps such a strong and natural strawberry flavour which is made truly, incredibly ah-mazing with the addition of vanilla.

You know what makes it even better . . . its pink!!!!!

Strawberry Vanilla Layer Cake with Chocolate Yoghurt Frosting

Ingredients –
Serves 8+
(FYI – I used 2 x 6 inch round baking pans)

1/4 cup butter
1/2 cups sugar
1 cup plain flour
1 tablespoon baking powder1/4 teaspoon salt
1/8 cup milk (I use skim)
1/2 cup pureed strawberries (3/4-1 cup berries)
2 teaspoons vanilla extract
2 egg whites

For the Frosting –

1/2 cup greek yoghurt (I used fat free)
1/8 cup cocoa
1/2 cup icing/powdered sugar
1/2 cup dream whip/cool whip/whipped cream

Optional for filling-

Strawberry Jam
Dream whip/cool whip/whipped cream
Fresh strawberries for garnish

Method –

Preheat oven to 175’C (350″F)

Place your strawberries in a blender and blend until pureed.

Pour into a small bowl through a mesh sieve to remove any seeds,

then set aside.

Over a medium size bowl sift flour, baking powder and salt then set aside.

In a medium bowl place butter

and sugar and beat until fluffy (about 3 mins).

Add egg whites

and vanilla and beat until well combined.

Pour in milk

then add strawberry puree and beat until just combined.

Add sifted flour mix and stir until just combined.

Pour unto prepared baking pans and bake for 25-30 mins or until cake tester (or toothpick) comes out with just a few moist crumbs attached once inserted into the centre.

Allow to cool in pans for 10 mins

Then transfer to a wire rack to cool completely.

While the cake is cooling prepare your frosting

In a medium size bowl place yoghurt,

add cocoa

then icing sugar and whisk until well combined.

Add whipped cream (or dream whip) and gently fold in until well combined.

Refrigerate until ready to frost your cake.

To assemble –


Place one cake layer onto a serving stand and spread with strawberry jam.

Add a generous dollop of cream and spread evenly leaving about 1cm border from the edge.

Add remaining cake layer.

Spread with chocolate frosting.

Top with a final spoon of cream/dream/cool whip and finish with a plump and delicious strawberry.

Cut yourself a sweet slice

and enjoy 🙂
