2️⃣ – How is it March already and I am only just sharing a new almond butter recipe with you?!


How did I let this happen?!

Honestly, I don’t even know who I am anymore?!

I feel like I’ve let you down . . .

But . . . you guys . . . I can make it up to you because today I come bearing what I firmly believe to be my greatest batch of almond butter yet.

I know I say that about them all but I really, REALLY mean it this time!

For those of you who follow along on Facebook and Instagram will know that I have recently discovered a new snack obsession in the insanely delicious RX Bar ‘s with the maple sea salt flavor being my current fave.

Seriously so good!

Nut butter, right . . .

So, here we are with our very first nut butter recipe of 2017 where one delicious obsession inspires another . . .

Are you ready . . .

Say hello to my latest love . . .

Deliciously simple, healthy, homemade, salted maple pecan almond butter!!!!

Deliciously buttery pecans and almonds are oven roasted then blended with a splash of vanilla, a drizzle of maple syrup and a cheeky little pinch of salt to bring you your very own subtly sweet, lightly salted, gloriously golden, velvety smooth, creamy jar of heaven.

You guys . . .

I can’t even!

I don’t even know how it’s possible that something so simple can taste SO good!

But it is and it does.

Believe me, I checked, not once, not twice but several times over.

So many times in fact that I had to re-make the recipe just so I could take some photos for you!

Talk about taking one for the team 😋😋😋

Anyways, I checked, and checked and checked again and yep – it really is absolute awesomeness personified!

I don’t know what it is but this batch latest batch of almond butter is certainly different from all the ones we’ve made in the past.

It’s smoother, creamier, richer, more indulgent and decadent yet somehow at the same time manages to feel lighter?! I don’t know how it’s even possible but it really is even more awesome than those that have come before it!

Even if I do say so myself.

As far as nut butters go this salted maple pecan almond butter is definitely next level!

Maybe it’s the different oils in the pecans, I honestly don’t know but, whatever the reason I’m sure not complaining!

This maple pecan almond butter really is divine!

It’s deliciously buttery, subtly sweet, lightly salted, velvety smooth and I am head over heels in love!

I mean would you just look at it?!

That color!!!!!!!

That texture!!!!

Those flecks of vanilla!!!!

So much deliciousness in one pretty little jar! 😍😍😍

As always our healthy, homemade almond butter is made with no refined flours or sugars, using just a handful of real food ingredients that I bet you have on hand already.

Once you’ve roasted those golden delicious, pecans and almonds you’re divine little jar of heaven comes together in under 10 minutes!

Oh and I should probably mention that not only does our salted maple pecan almond butter taste like an absolute dream but, it also happens to be vegan, gluten free and paleo friendly !

It really is simply divine and you need it in your life like, yesterday!

4 ingredients, 10 minutes in the making – stop what you’re doing, this needs to happen now!

Once you have your jar of subtly sweet, velvety smooth, creamy, dreamy, maple pecan almond butter ready and waiting in your hot little hand, go ahead and use it as you would, business as usual – dive head first into the jar and eat your way out . . .

or you be a little more refined and get yourself a spoon . . . do what you feel, no judgement here 😉

And, I’m not saying that you have to but, I you know I strongly, STRONGLY insist suggest that you do . . . grab yourself a big ol’ block chunk of your fave dark chocolate, schmear it with a heaping spoonful of your freshly blended maple pecan almond butter sprinkle it with an extra cheeky pinch of salt . . .

And lose yourself in the deliciousness that you just created.

All natural, quick and easy, subtly sweet, velvety smooth, creamy, dreamy, lightly salted, healthy, homemade, maple pecan almond butter;

I can’t even – just do it already!

Make it, eat it, love, love, love it!

Salted Maple Pecan Almond Butter {Vegan, Gluten Free & Paleo Friendly}

Makes approx 2 1/2 cups All natural, quick and easy, subtly sweet, velvety smooth, creamy, dreamy, lightly salted, healthy, homemade, maple pecan almond butter

Ingredients –

1 1/2  cup of raw almonds

1 1/4  cup of raw pecans

1 Tablespoon of vanilla bean extract (or 8-10 drops of vanilla cream stevia – I like to use Sweet Leaf Stevia )

1 Tablespoon of Maple Syrup

1/2 heaping teaspoon of salt flakes

Method –

1 – Preheat your oven to 175’C (350’F)

2 – Line a large baking sheet with baking/parchment paper (or a non stick silpat mat) and pour on your almonds and pecans, making sure they are spread evenly – aka not crowded.

3 – Roast your nuts for 7-10 minutes, until fragrant, lightly toasted and gloriously golden.

4 – Pour your golden, delicious roasted nuts into the bowl of your food processor or blender, add salt and process until smooth and creamy (or your desired consistency). Initially the almonds would grind down into a powder, give it a minute or two and the oils will extract and it will become deliciously, thick, rich and creamy. You may need to stop and scrape down the sides of the bowl occasionally.

5 – Once you have blended to your desired consistency, add your vanilla and maple syrup and process again just to combine.

Sometimes the natural sugars in the maple syrup can cause the nuts to solidify slight and they may look like they have siezed but do not panic, just keep blending and they will come good (aka creamy, dreamy and silky smooth), promise.

6 – Taste and adjust seasoning accordingly – add a little extra salt or more vanilla or maple syrup if you feel the need and, if you prefer a thinner consistency feel free to add a drizzle of coconut oil to thin it out.

7 – Store in an airtight container in the fridge. It should keep well for up to 2 weeks – if it lasts that long! (← seriously, good luck with that 😉 )

    This almost looks too good! I’m a little afraid to try because I’ll never be able to eat plain almond butter again…..but I’m still definitely trying this! What’s the point in living if you don’t take risks, right? 🙂
