If your looking for a sweet substitute for morning or afternoon tea (even if your not….) look no further. This pear and blueberry bread is light and slightly sweet…..perfect for any occasion, any time of day. A refreshing, simple sweet summery change to your usual repertoire of baked snacks.

Whether you have company joining you or even if its just little ol’ you all on your lonesome (lucky ;)) this bread is one you really must try. I don’t mean to be bossy….I just really like this pear and blueberry bread. I think you will too, bake it…..you won’t be sorry.

As soon as I saw the original version of this recipe at smitten kitchen I knew it was one I had to try. I have adapted it here and there (as I do) if you’d like to check out the original version click here.

Ingredients –

This recipe adapted from Smitten Kitchen
serves approx 28
(I got one round “bundt” loaf – 16 slices, and one regular loaf pan – 12 slices)

3 cups plain flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon salt
1 tablespoon ground cinnamon
1/4 cup butter
1/2 cup apple sauce
1 eggs
2 egg whites
2 cups sugar
2  firm, ripe pears – grated (approx 2 cups total)
1 cup blueberries, rinsed.
2 teaspoons vanilla extract

Method –

Preheat oven to 175’C (350’F)

In a medium bowl, sift flour, baking powder, baking soda, cinnamon and salt. Set aside.

In another medium bowl add sugar,

then butter,

followed by apple sauce.

Next add eggs, and egg whites.

Then pour in vanilla

and whisk until combined.

Next take your pair of pears (Im such a dork – I know, I couldn’t help myself….sorry),

peel and grate them,

then add to sugar/butter mix

and stir until just combined then pour pear/sugar batter over flour mix,

stir until combined.

Add blueberries

and carefully stir until just combined.

Pour into baking pan (you can use any kind you want, a regular loaf pan works just fine too) and bake for approx 40-60 mins (depending on your choice of baking pan) until beautifully golden brown.

Allow to cool in baking pan for approx 10 mins

then transfer to a wire rack to cool completely.

Dust with icing sugar to serve

cut yourself a delicious little slice and enjoy with a nice hot cup of coffee (or tea).

Ahh sweet moments like this….. especially when each blissful bite contains a sweet, satisfying blueberry explosion….. love 🙂
