Can someone please tell me why it is that I am surrounded by Christmas decorations?
Well not right here as I sit and type but anytime I leave the apartment I get punched in the face with Christmas?
At the supermarket – Christmas snacks
In Target – – Christmas trees
K-mart – Christmas decorations
. . . any and every retail store . . . mountains of Christmas decorations.
Too early people!

Sorry for all the !!! but come on. Christmas in october.
It’s just not right. We haven’t even had Halloween yet.
Don’t get me wrong, I love Christmas. It’s my all time fave but, its october . . .
Now, because I have been punched in the face with Christmas and I warned you I was going to punch you in the face (in the nicest and most delicious way possible) with peanut butter today my friends we are making peanut butter cups.
In our family it’s not Christmas without home made peanut butter cups.
Who doesn’t love a good peanut butter cup?
No one, exactly.
These home made peanut butter cups are out. of. this. world!
I can’t even take it. They seriously are diiiiiiivvvvviiiiinnnnnneeeeeee
And dangerous because you can whip up a batch in 10 min flat.
And they are totally healthy because I made mine with dark chocolate so you know, its packed with all those antioxidants. Then you have the peanut butter which is protein, straight up. It’s totally healthy, a negative calorie snack 😉

These bite size morsels peanut butter filled chocolatey goodness of are perfect for you to wrap up and give out as halloween treats or as a post workout snack you know being totally healthy and all 😉 or for you to protest the early arrival of Christmas merchandise . . . by eating the entire batch while watching elf.
So not my fault people, I was just punched in the face, not once, not twice but repeatedly by Christmas . . . what else was I going to do?

Peanut Butter Cups
Makes 16 bite sizes piecesIngredients –
3/4 cup chocolate chips (I used Dark)
1/4 cup peanut butter (homemade or store bought is fine)
1/8 cup icing/powdered sugar
1/4 teaspoon vanilla extract
Method –
Melt chocolate by your preferred method.
Spoon a teaspoon of melted chocolate into each chocolate case and carefully spread to the edges. Refrigerate or freeze until set.
While the chocolate is setting –
In a small bowl combine peanut butter, icing sugar and vanilla and stir until well combined. Mixture will be thick.
Once chocolate is set place a teaspoon of peanut butter filling into each chocolate cup and using the back of the spoon gentle press into the chocolate casing.
Top with a teaspoon of melted chocolate and refrigerate/freeze until set.
Dangerously simple to make, dangerously delicious to enjoy, dangerously addictive . . . you have been warned!

I cmpletely share your sentiments on Christmas in October….not to mention AUGUST like it was in the DJs here in Wollongong. My favourite holiday is Thanksgiving. And these PB cups look amazing!
Oh I love Thanksgiving too although I have only had one real Thanksgiving because as you know its not something we do here in Australia. Although we do have our own mini Thanksgiving every year 🙂
