I think we can all agree that what makes a good pie a great pie is the crust, am I right?

I have to tell you that my all time favourite pie crust is one made with crushed up cookies. Not just any cookies but one that holds some sweet childhood memories. Scalliwags. Do you remember enjoying them as a special treat with a nice glass of milk when you were little? Well I certainly do and I think in my own silly way this is my sort of “grown up” version of this innocent and sweet indulgence.

Its not a complicated recipe and you could really use any kind of filling you like, its very versatile.

Here is the recipe for my all time favourite cookie pie crust –

Ingredients –

(makes one pie)

1 1/2 cups of crushed scalliwag cookies (half a pack)

1/4 cup of butter

1/8 cup of sugar

Method –

Preheat oven to 180’C (350’F)

Crush cookies anyway you like. I usually put them in a large ziplock bag and squash them with my rolling pin, its less messy this way 🙂

Melt butter by your preferred method (either in a saucepan or microwave).

In a medium bowl (or the saucepan you melted the butter in) add crushed cookies and sugar and stir until combined.

It should looks like this 🙂

Pour your mix into your pie plate (totally up to you if you want to grease your pan, or line with baking paper).

With a small section of baking paper carefully press and smooth the crust to evenly cover the pie plate. I find it easiest to start this with the back of a spoon

Then finish off pressing in the corners and edges with my fingers. I have tried just using my fingers or a spoon with no baking paper but found myself very frustrated as the mix would always stick to my hands or the spoon and not the pie plate!

Now we are ready to bake 🙂

Bake for 10 mins (at 180″C/350’F)

The pie crust may still feel a little soft but don’t worry, it will set firmly with a good crunch to it as it cools.

Now fill it as you wish and enjoy.

We usually make a delicious chocolate torte with ours by combining some chocolate and vanilla pudding and filling it with that then topping it all off with some dream whip (or cream) and berries. Yum!!!
