What a busy few months it has been for me. Relocating from our tiny rural country town back home to the big city. A dream come true. Although that in itself is enough to keep anyone person busy, busy on top of that I have also been busy taking care of a very sick family. In all seriousness I don’t think I can recall a time when my loved ones have been so unwell and for so long! Thankfully we are just about settled into our new home and finally fighting fit again, hooray!!! 🙂 🙂 🙂

Anyway enough about me…

In seeking a quiet moment of solitude in the madness that has been the last few months I found myself looking through the archives of one of my favourite baking blogs “two peas & their pod” I came across this recipe for a delicious looking batch of cocoa fudge cookies.

These cookies have the most wonderful crunch on the outside, they also manage to be light, fluffy but somehow very fudgey on the inside all at the same time. They really are wonderful. They tick all the boxes for me as they are so, so yummy but also very low in fat (although you would never know it with how wonderful they taste, trust me) they only have 47 calories and 0.2g of fat per cookie! Don’t let that put you off, have I ever steered you wrong?? I didn’t think so 😉

My Favourite Cocoa Fudge Cookies

Ingredients
(makes 30)

1 cup Plain flour
¼ teaspoon baking soda
A Pinch salt
1 tablespoons butter, heaped
7 tablespoons cocoa powder
2/3 cup white sugar
1/3 cup brown sugar
1/3 cup plain greek yogurt (I used fat free)
1 teaspoon vanilla extract

Method –

Preheat oven to 175’C (350ºF)

In a medium bowl melt butter.

Stir in cocoa powder and sugars

(the mixture will resemble coarse, wet sand…if wet sand was made of delicious chocolately goodness that is :)).

Add yogurt and vanilla, then stir to combine. Set aside.

In a large bowl sift flour, baking soda and salt.

Pour cocoa/yoghurt batter over the sifted flour mix,

and stir until just combined (It’s a very wet cookie batter just FYI :))

Spoon mixture (about a tablespoon each) onto baking trays lined with baking/parchment.

Bake for 8 to 10 minutes or until almost set. Allow to cool (if you can)

Clearly I couldn’t wait…once you smell how fabulous they smell fresh from the oven, you’ll know why.
