Last week I promised you cookies and so as promised for our test it out tuesday recipe this week we are making cookies!!!!!! I assure you these babies are totally worth the wait.

Light, sweet, cookies, jam packed with delicious little dark chocolate chips that also happen to be totally healthy and paleo friendly.

I mean what’s not to love?!

Not only are they insanely delicious and all kinds of healthy but they are also super quick and easy to prepare, ready in well under 30 mins.

All natural with no refined sugars added these delicious choc chip cookies are sweetened simply with a splash of vanilla extract, a drizzle of maple syrup and of course those delicious little antioxidant rich dark chocolate chips.

They also pack a sneaky little hit of protein and good dose of essential, healthy fats because they are made with almond flour.

The subtle nuttiness of the almond flour combined with the hint of sweetness from the coconut flour is a killer combination. The flavours are truly incredible! And when you add to that the vanilla and maple syrup, you get a delicious little cookie that has a slightly sweet and nutty flavour with a subtle hint of caramel. Then you throw in those delicious little dark chocolate chips and you have yourself one killer cookie!

Fresh from the oven these cookies are crispy and crunchy on the outside but soft, light and fluffy, almost cake like on the inside. The following day they lose some of that crispness but the flavours . . . oh. my. deliciousness. The flavours seem to really settle into each other and somehow intensify in the day or two that follows, thats if they even last that long!

These cookies are seriously addictive. The day that we baked the first batch of these cookies the little lady and I may have polished off close to half of them in one sitting?! Yes really, I had to pack them away and stash them in the back of the pantry. Out of sight, out of mind right? Yes right, if only 😉

Simple to make, simply delicious, simply to die for and seriously addictive but totally healthy.

Healthy, Grain Free {Paleo Friendly} Choc Chip Cookies
Very slightly adapted from this recipe shared by the simply stunning Lexi of Lexi’s Clean Kitchen
Makes approx 22 bites sized, vanilla infused, paleo friendly, choc chip studded cookies

Ingredients –

1 cup of almond flour/meal (both homemade and store-bought will work)

1 Tablespoon of coconut flour

1 egg

1 Tablespoon of coconut oil, melted and cooled

2 Tablespoons of warm water

3 Tablespoons of maple syrup

1 teaspoon of vanilla extract

1/4 teaspoon of baking soda

a pinch of salt

2-3 Tablespoons of dark chocolate chips, finely chopped.

Method –

1 – Preheat your oven to 175’C (350’F) then line a baking sheet with baking/parchment paper and set aside.

2 – In a small bowl or jug whisk together egg, coconut oil, water, maple syrup and vanilla then set aside.

3 – In  a medium sized bowl combine almond flour/meal, coconut flour, baking soda and salt then whisk to combine.

4 – Pour vanille/egg mix into the bowl with your almond/coconut flour and stir to combine.

5 – add 3/4 of your chocolate chips and stir to combine.

6 – Using a couple of teaspoons or tablespoon dollop little mounds of your cookie dough onto your prepared baking sheet.

7 – Dampen your fingers and careful tap the cookies down into desired shape. They will spread and rise just a little but nothing crazy so shape them close to how you when to eat them.

8 – Sprinkle over remaining chocolate chips and bake for 10-12 mins until the edges are golden and your kitchen is smelling like heaven.

9 – Allow to cool for 10 mins or so on the baking sheet then transfer to a wire rack to cool completely.

10 – Try not to eat the entire batch in one sitting. FYI – this will very be difficult!
