Can we just talk about TV for a minute?

Or more like how there is nothing on to watch?

What is the deal?

Apart from My Kitchen Rules and The Biggest Loser (which just between you and me I’m not really loving this season) what else is there to watch?

I did watch Game of Thrones with spunky husband and really enjoyed that too but, we are between seasons at the moment so that’s no good to me.

For christmas I got the box set of Felicity and have just finished watching it. I loved it! Well all apart from the final 3 episodes sadly but we just won’t talk about those. Other than that I really, really enjoyed it. I just love Kerri Russell, I mean how stunning is she? And that hair?! Gorgeous!

What should I watch next?

Total first world problem I know but seriously, what should I watch? Suggestions please?

Ok enough about me, my girl crush on Kerri Russell and my first world problems and onto the food.

Oh you guys do I have something special for you today.

Double Chocolate Black Forest Mini Cupcakes that also happen to be secretly healthy, paleo friendly and grain free.

Yes, sweet invisible internet friend of mine today we are having ourselves some guilt free, double chocolate mini cupcakes studded with sweet, juicy little cherries and taste like an absolute dream.

With no refined sugar or flour, they are sweetened naturally with a little maple syrup, a splash of vanilla extract and of course those sweet and juicy little cherries.

These cupcakes really are incredible. They are super fudgey and incredibly rich but also really light and they literally just melt in your mouth. I’m pretty sure the super light texture is thanks to the coconut flour which also how these cupcakes manage to be both grain free, low carb and paleo friendly, although no one would ever know they are secretly healthy thats for sure.

First up we have our double dose of antioxidant rich dark chocolate deliciousness thanks to a little unsweetened extra dark cocoa powder and a tablespoon of dark chocolate chips. I mean that in itself is a winning combination but when you add in a shot of espresso,a splash of vanilla a drizzle of maple syrup and then those juicy, sweet little cherries . . .  they are just so good!

If you are not a lover of coffee – firstly we can no longer be friends, I mean seriously who are you?! Secondly are you insane?! Kidding . . . well  kinda, but honestly if you’re a coffee hater please don’t let the fact that this recipe has a single shot of espresso in it put you off making these insanely delicious little cupcakes. You can’t actually taste the coffee, it just somehow seems to intensify the flavour of the chocolate which is always a good thing right?! Trust me on this.

Super fudgey, incredibly rich without being overly sweet, these secretly healthy, Double Chocolate Black Forest Cupcakes will totally satisfy the most intense chocolate craving minus the guilt.

Plus they are mini and we all know mini = more

Low carb and grain free, super fudgey, melt in your mouth double chocolate black forest cupcakes that also happen to be secretly healthy, and paleo friendly. Just yes!

Double Chocolate Black Forest Mini Cupcakes {Grain Free & Paleo Friendly}
Makes 18 super fudgey, chocolate, cherry spiked, grain free, paleo friendly, secretly healthy mini cupcakes

Ingredients –

2 Tablespoons of cocoa powder

2 Tablespoons of coconut flour*

3/4 teaspoon baking powder

1/4 teaspoon of ground cinnamon

1 teaspoon of instant coffee granules (I use decaf)

2 eggs

1 Tablespoon of warm water

2 Tablespoons of maple syrup

1 teaspoon of vanilla extract

1 teaspoon of coconut oil, melted and cooled

a pinch of salt flakes

1/4 cup cherries, seeds removed and finely shopped.

1 Tablespoons of dark chocolate chips divided.

Method –

1 – Preheat oven to 175′C (350′F) and prepare your mini cupcake tray with paper cases or lightly grease and set aside.

2 – In a medium size bowl whisk together eggs, vanilla, maple syrup, instant coffee, warm water and coconut oil until well combined.

3 – Sift cocoa, coconut flour, baking powder, cinnamon and salt into your vanilla egg mix and whisk until just combine.

4 – Add 3/4 or your chocolate chips and 3/4 of your chopped cherries and stir until just combined.

5 – Spoon batter into your prepared cupcake tray, sprinkle with remaining chocolate chips and cherries then and bake for 10-12 mins until the tops spring back when lightly pressed and a toothpick comes out clean with just a few crumbs attached when inserted into the centre.

6 – Allow your delicious little cupcakes to cool in the tray for 10 mins, then transfer to a wire rack to cool completely.

*If you don’t happen to have coconut flour on hand please don’t let that put you off making these cupcakes. You should be able to pick it up in the health food section of your local supermarket (I got mine in Coles), totally worth a special trip – promise.
