Last week my dear little niece turned 11!

I can not believe how old I am getting! fast the years are flying by!

These cupcakes I made in honour of her special day. She didn’t want a big fuss, no fancy cake with layers of frosting. just something simple but outrageously delicious of course.

Sugarbean was going to be having chocolate chip blondes, which girlfriend wanted to make all on her own! Um she’s how old again?!

Seriously, how is my “little” niece able to bake her own batch of blondies? Or even reach the kitchen counter?!

I can not believe it! Slow down father time, just hold up a minute – puhlease??????

So these cupcakes . . . so simple but so outrageously delicious!

They are light, fluffy with the perfect crumb. The brown sugar gives these good ol’ classic vanilla cupcakes a hint of caramel which is all kinds of awesome.

And then theres the chocolate chips . . . they just take them over the top . . . the icing on the cake . . . or the chocolate chip in the cupcake? I don’t even know what I’m saying, someone stop me . . .

Now, I may not be the biggest of chocolate lovers . . . yes really . . . I’m sorry . . .  please don’t think less of me . . . I know I have issues . . . lets call them quirks shall we? K thanks, moving on. These chocolate chip cupcakes are where its at.

They are simply perfect just as they are however, they are also super awesome with a dallop of cream (or dream whip) as “frosting” and finished with a plump juicy strawberry.

Because there are only 3 of us in our little family I created this recipe that makes enough cupcakes for just me the three of us. It’s perfect! For those of us who may have issues with self control no need to worry about having a billion extra cupcakes laying around just begging to be devoured.

Chocolate Chip Cupcakes for 3
Makes 3 standard size cupcakes

Ingredients –

1 Tbsp Brown sugar
1/4 cup plain flour
1/2 tsp baking powder
1/4 tsp baking soda
1/8 of salt
1 Tbsp chocolate chips
1/2 tsp vanilla extract
1 Tbsp butter, softened
1 Tbsp  milk (I use skim)
1 egg white

Optional For Serving –
Cream
Strawberries

Method –

Preheat oven to 175’C (350’F)

In a medium bowl sift brown sugar, flour, baking soda, baking powder and salt.

Add egg white,

butter,

vanilla,

and milk

then stir to combine.

Add chocolate chips,

and stir until just combined.

Line a cupcake pan with paper cases

and fill approx 2/3 full.

Bake for 12-15 mins until lightly golden and the top springs back when lightly pressed.

Eat as it . . . be warned those delicious pieces of ooey gooey melted chocolate are insanely hot fresh from the oven . . . speaking from experience here people. Lesson learnt . . . for now 😉

Or allow the cupcakes to cool and top with some whipped cream “frosting” and a fresh strawberry.
