So if you have been following along with my insta-life you will know that I have become seriously and unashamedly addicted to these dangerously delicious Cherry Chocolate Chunk bars made by the genius folks over at Raw Revolution or should I say evil genius for creating something so addicting . . . or is it addictive? Whatever it is I can’t stop, won’t stop eating all of the Cherry Chocolate Chunk bars ?!

They are just so, so good!

Tiny but intense little cherry infused, chocolate and almond chunk ridden bites of sweet, chewy, healthy deliciousness.

So this recipe today is my copy cat version of those delicious little bars and I hope you enjoy them as much as I do.

FYI – dried cherries can be a little hard to get a hold of here in Australia but I stumbled across some at a spice merchant (stall?!) at our local farmers market. I was so happy with this discovery I may have kissed the sales man and proceeded to high five and happy dance with anyone and everyone at said stall . . .

One taste of these delicious little Chocolate, Cherry, Almond Chunk Energy Bites and I think you, sweet invisible internet friend of mine will be high fiving and happy dancing right along with me.

Not only are these babies outrageously delicious and super simple to make but they are all natural, nothing weird or artificial just pure goodness baby. With only 6 ingredients, a minute or 2 in the food processor you are ready to rock, roll, eat and repeat. I mean what’s no to love?!

These bites are intensely chocolatey, and perfectly sweet studded with almonds for extra protein which we all know helps to stabilise blood sugar levels and keep you fuller for longer so it’s a total win. I love to use dark chocolate both chips and cocoa powder, I find that they it’s less sweet that way. The dark chocolate provides the perfect balance to the super sweetness that our beloved medjool dates bring to the party. Not to mention the dark chocolate has all those antioxidants  . . . seriously snack time winning!

Guilt free. No post indulgence sugar coma to contend with. the only trouble you will have is not eating the entire batch in one sitting.

Chocolate, Cherry, Almond Energy Bites
Makes approx 60 delicious bites of chocolate cherry bite size balls of energy

Ingredients –

1 cup almonds

6 large dates (I use medjool)

1 teaspoon of vanilla extract

2 Tablespoons of cocoa powder (I love to use Hershey’s special Dark ♥)

1/3 cup dried cherries

2 Tbsp dark chocolate chips

Method –

1 – Place almonds in a food processor and pulse until they look crumbly, you want a few bigger “chunks” to give some texture not have them ground to dust.

2 – Remove 2 tablespoons of your almond crumble and set aside.

3 – Add dates to the almond mix and pulse until they start to combine with the almonds.

4 – Add vanilla and cocoa powder and pulse again until mixed through.

5 – Add cherries and chocolate chips and pulse a few more times until just combined. It should start to come together pretty quickly into a sticky dough. A delicious, delicious sticky “dough”.

6 – Transfer your delicious sticky “dough” to a larger bowl and add your reserved almonds and stir to combine.

7 – Using your hands, roll approx 1 Tbsp of mixture unto little rounds then pop them into a sealed container (or even just a ziplock bag) and store in the fridge until your ready to devour scoff Inhale politely consume 😉
