When I was in high school I got a weekend job working in a doughnut shop at our local mall.

At the end of the day we could take home as many of the left over doughnuts as our hearts desired . . . needless to say the entire time I worked there our friends, family and freezer (not to mention my belly) was well and truly filled with more doughnuts than anyone could possibly dream of.

By the time I was done working there I was sure I would never want to look at, let alone consume another doughnut as long as I lived.

Then a few weeks ago I saw these little oven baked chocolate cake doughnuts that the lovely Laurie over at simply scratch had made.

I changed my mind, I wanted a doughnut!

These doughnuts are so light, so chocolately and finished with the most amazing vanilla glaze

oh my the glaze!!!!

The glaze is so simple, just powdered icing sugar, vanilla and a splash of milk . . .  but the glaze!!!!! Oh its just soooooooooo good!

I can’t even tell you.

That glaze adds an amazing sort of crunch to these super light, seriously delicious chocolately little doughnuts.

Oh and if they aren’t all inhaled enjoyed fresh from the frosting station the day they are made, the following day they are even better. Once they have had 24 hours to soak up that wonderful glaze . . .

Out.

Of.

This.

World.

You know what makes them even more delicious and enjoyable? The fact that they are a million times better for you than their deep fried cousins.

Chocolate doughnuts with a dreamy vanilla glaze without the grease coated guilt – winner winner chicken dinner!

Chocolate Cake Doughnuts with Dreamy Vanilla Glaze
Adapted from this recipe from Simply Scratch
Makes 22 doughnuts

Ingredients

1 cup plain flour
1/4 cup granulated sugar
1/4 cup brown sugar
3/4 cup cocoa
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/4 teaspoon ground cinnamon
3/4 cup buttermilk (I always make my own with this recipe, so easy!)
1/2 cup coffee, cooled (I used decaf)
1/4 cup applesauce
1 tsp Vanilla
1 egg

For the Glaze –

1/2 cup powdered icing sugar
1 Tbsp milk (I used skim)
1/4 tsp vanilla

Method

Preheat oven to 175’C )350″F)

In a small jug (or bowl) pour your buttermilk.

Add applesauce,

then egg

then vanilla then whisk to combine. Set aside.

Over a medium bowl sift flour, sugars, baking powder, baking soda, cinnamon and salt.

Pour in your buttermilk mix.

Realize you forgot to add your cocoa powder when you sifted the flour and sugars . . . so sift in your cocoa . . . better late than never right? No biggie . . .

Pour in cooled coffee

and whisk to combine.

Slightly grease your baking pan with a little spritz of olive oil

Pour or spoon the batter into your doughnut pan.

(Fill approx 2/3)

Bake for approx 15 mins, until they spring back when lightly pressed.

Allow to cool for 10 mins in the pan

then transfer to a wire rack to cool completely before frosting.

For the Glaze –


Place powdered icing sugar in a small bowl.

Add vanilla

gradually add milk until you reach your desired consistency.

Drizzle over doughnuts, grab a cup a coffee, a trashy magazine and enjoy 🙂
