Umm banana bread what?!

Look out kids there is a new snack food on the black and its kicking that old fashioned regular style of banana bread to the curb!

You goin’ down old old timer!

Seriously, these banana bread donuts are beyond delicious!

We all know I’m not one to exaggerate (much) and although it may seem like I say that every new recipe I post is the newest bestest thing to hit your tastes buds these donuts . . . ohmywordthesedonuts!

You need these in your life!

Today!

They have the traditional flavours of its old skool counter part with a hint of cinnamon and of course the caramelised banana flavour we all know and love but the brown sugar in these bad boys really intensifies the caramel flavour. Not in an in your face over the top kind of way though. Its all kinds of wonderful.

The addition of greek yoghurt really makes these donuts the perfect texture. Don’t be afraid. Embrace the yoghurt.

Bonus fact – with the strawberry frosting these babies pack 2 servings of fruit in one divine little snack.

Totally healthy. Gotta make sure your getting your daily intake of fruit right?

Banana Bread Donuts {Baked} with Strawberry Glaze
Makes 12 donuts


Ingredients –

For the Donuts –

1 small banana
2 Tbsp Brown sugar
1 egg
1 tsp vanilla extract
1/4 cup greek yoghurt (I use Chobani 0%)
1/4 tsp salt
1/2 tsp cinnamon
3/4 tsp baking soda
1/2 tsp baking powder
3/4 cup plain flour

For the Glaze –

2 large strawberries
1 Tbsp strawberry jam (I use St Dalfours 100% fruit spread)
1 tsp milk (I use skim)
1 cup icing sugar

Method –

Preheat oven to 175’C (350’F)

In a medium bowl place banana,

sugar,

egg,

vanilla,

then yoghurt

using a fork mash the banana and stir to combine.

Sift over flour, baking powder, baking soda, cinnamon and salt

and stir until just combine.

Pour batter into a donut pan (or mini muffin tray if you don’t have a donut pan) and bake for 10-12 mins,

or until golden brown, smell to-die-for and spring back when lightly pressed.

Allow to cool in the pan for 5-10 mins then transfer to a wire rack to cool completely.

Try not to eat these golden little gems pre-glaze . . . it will be tough . . . but totally worth it

While your donuts are cooling its time to make the glaze

Take your 2 plump, ripe and seriously delicious looking strawberries.

Wash them and cut off their heads the hull/stalk . . . whatever its called.

Chop the strawberries into quarters and place in a blender.

Add jam

and blend until smooth.

Sift icing sugar into a small bowl,

pour strawberry puree through into the icing sugar. I like to do this through a sieve to remove any seeds.

Add milk and stir to combine.

It should be a nice smooth consistency,

not to runny, not to thick . . . just right

Face plant dip donuts into the strawberry glaze

and return to the wire rack  . . .

continue until all donuts have been dunked.

Take a biiiiiigggggg beauitful, blissful bite . . . and enjoy 🙂
