In the days leading up to our vacation I attempted to buy as minimal groceries as possible. My aim was to use up the remaining bits and pieces in our fridge, freezer and pantry. Do you do that too?

Pretty clever I thought . . . until I was in serious need of ice cream which I may or may not have finished the night before . . .

What?

Don’t look at me like that . . . I had hunger only ice cream could satisfy.  Come on now, I know you’ve been there 😉

Suddenly, I recalled a recipe I had seen once upon a late night hour scrolling through countless foodie blogs and websites (or possibly just on pinterest) . . . anyway wherever it was I happened to stumble across this little hidden treasure I am not entirely sure. What I am sure of is 2 ingredient ice cream (although somewhat sceptical that this would actually work out), ah – yes please!

We all know I have issues with bananas going overly ripe before I can manage to enjoy them so this recipe was a win win for me. Bananas and peanut butter, thats all you need. Oh and a blender 🙂

Yep friends just a blender, bananas and peanut butter (or you could try nutella . . . I plan to give that a whirl so stay tuned). This recipe is so easy, super healthy and will satisfy that ice cream craving (minus the guilt – like I said . . .  win, win :))

All you have to do is throw your bananas and peanut butter into a blender, blend until nice and smooth then pour into your ice cream maker (not entirely necessary, you could just pop it  straight into the freezer but I did it just because I could). Then enjoy, seriously smooth and delicious banana pb ice cream. With a good drowning drizzle  of chocolate topping – YUM  🙂

By the way, we are almost finished up with our little family holiday are you sure there is nothing you want me to bring you????

Ingredients
Makes approx 2 cups

Oh and FYI – see that ah-mazing chocolate topping….recipe coming next week!!!!!

4 x Over ripe Bananas

2 x Tbsp Peanut butter

Method –

Peel your manky over ripe bananas and slice them up.

Place them into a blender.

Add peanut butter.

Blend until smooth.

Pour into your ice cream maker and churn until you reach desired consistency.

For me its about 20 mins, this way its firm but also sort of melty. You know like when you get home from grocery shopping and go to put the ice cream away and its all melty around the edges so you just go ahead, grab a spoon and dive right in forget about putting the rest of the groceries away this is an opportunity not to be missed! Or maybe thats just me . . .

If you like to have your ice cream a little firmer, put into a freezer safe container and freeze for up to 1 hour.

When your finally ready to enjoy, grab a big ol’ scoopful

Place into a bowl,

add some chocolate topping and enjoy 🙂
