Quick and easy I mean, and all kinds of delicious!
And this latest version is no exception.
Buttery cashews are combined with some deliciously sweet, caramel infused, magical little medjool dates to create our trusty ol’ bite base but, today we are throwing in some plump and chewy, deliciously sweet little, antioxidant rich, dried blueberries along with some freshly grated lemon zest for a light, refreshing, zesty little twist!
The sweetness of the medjool dates combined with our buttery cashews is a match made in heaven and when you throw in a splash of vanilla and a pinch of cinnamon you take things to a whole new level ♥♥♥
The addition of the fresh lemon zest cuts through the natural sweetness of our vanilla/date base just perfectly bringing an almost summery freshness to each and every delicious little, lemon infused bite and then when you add in those plump and juicy, antioxidant rich dried blueberries . . . you guys, what more can I say?!
Simply blend/process, roll and eat.
So simple, so healthy and so, so delicious!

A handful of all natural ingredients, 5 minutes in your food processor or blender and 5 mins to roll yourself some delicious little bite size servings of clean eating, lemon infused balls of energy giving, blueberry packed bites of deliciousness!

Lemon and Blueberry Energy Bites
Makes approx 40 lemon infused, cinnamon spiked bites of blueberry packed, energy giving balls of deliciousnessIngredients –
1 cup cashews (I used raw, unsalted)
6 medjool dates, pits removed
1 teaspoon of vanilla extract
1 teaspoon of finely grated lemon zest
1/4 teaspoon of ground cinnamon
a pinch of salt flakes
2 Tablespoons of dried blueberries, roughly chopped
Method –
1 – Place cashews in your food processor/blender and pulse until crumbly, you want there to still be a few bigger chunks to give the bites some nice texture.
2 – Add dates and pules until the mixture starts to come together into a sticky “dough”.
3 – Add vanilla extract, lemon zest, cinnamon and salt flakes and pulse again until combined.
4 – Add your dried blueberries and pulse until just combined.
5 – Using your hands, roll approx 1 heaping teaspoon of cookie dough into little bite size balls then transfer directly into your pretty mouth, or store in an airtight container (or even just a ziplock bag) in the fridge required ← that’s right, I said required. These bad boys are a need, not want people!

Is there a way to make this recipe work if I can’t find dates? I love the idea of the blueberry and lemon flavors!

You could try using dried figs or prunes if you can’t find dates? But check your local supermarket, any dried dates will work.
