OH you guys I am so sorry for skipping out on you last week . . . it was one of “those” weeks . . .
I have been running around like a crazy person trying to get things finished up and organized ready for when we head off on our highly anticipated, long over due, family vacation.
We fly out this afternoon and as I sit here talking to you, I am surrounded by half filled suitcases that have pretty much just had a few bits and pieces thrown in at random . . . we fly out today and I haven’t finished packing yet!
Help me!!!!!!!!!!!
On top of that, the weather here in Sydney has been absolutely miserable (so. much. rain!) which means the lighting has been terrible and I haven”t been able to get a decent photo to save my life. #firstworldproblems
And then I hurt my knee . . .
Anyway, it’s no excuse I know and I really am sorry for leaving you hanging, I know I have been taunting you with sneaky peeks of this recipe all week so, I’m just going to stop with the chit chat and get on with it already.
I’d like to introduce you to my latest obsession – all natural, quick and easy, light, fresh, sweet and spicy, healthy, homemade strawberry salsa!
You guys, I just can’t stop with the fruity salsa!
I am seriously, 100%, head over heels in love and I don’t care who knows it!
I am so very much in love that I may have made this recipe 3 times in one week (evidence → here, → here and → here ) and not just because I couldn’t get a decent photo but because I just could not get enough.
It’s so quick and easy to prepare, made with just a handful of ingredients that I bet you have on hand already and comes together in a matter of minutes but, most importantly it is insanely, and I mean insanely delicious!
It’s a little bit sweet, a little bit spicy and all kinds of addictive.
Or is it addicting?!
Either way it’s seriously delicious and you need it in your life like, yesterday!
Plump and juicy deliciously sweet strawberries are combined with some spanish onion, a sprinkling of fresh coriander (cilantro), a cheeky squeeze of fresh lime and one fiery little chili pepper.
Simply chop up your ingredients, throw them in a bowl, give it a little stir and you are good to go.
It’s light, fresh, sweet and spicy a serious flavor bomb that also happens to be naturally vegan, gluten free and paleo friendly – winning on so many levels!
Eat it straight up by the spoonful, throw it on some grilled chicken, add it to your favorite salad or just grab a big ol’ bag of chips and go to town!
Get. In. My. Belly!

Sweet and Spicy Strawberry Salsa
Makes approx 2 cups of light, fresh, sweet and spicy strawberry salsa with a cheeky little kickIngredients –
1 cup of strawberries, hulled and finely chopped
1 small red (Spanish) onion very finely chopped
1 green chili pepper finely chopped – more or less to taste with or without seeds depending on how feisty you are and how hot you like your salsa
1/4 cup of coriander (cilantro) finely chopped
A squeeze of fresh lime juice – approx 1 tsp
Salt and pepper to taste
Method –
1 – Place all ingredients into a small bowl and stir to combine. If you are making this ahead of time, don’t add the lime juice until a few minutes before you are ready to serve ad the acidity from the lime can cause the strawberries to break down a little after a few hours 😉
2 – Taste and adjust seasonings if necessary.
3 – Store in an air tight container in the fridge until you’re ready to
devourserve – should keep well for 2-3 days but, mine has never lasted that long 😉4 – Serve it with your favorite salad, or with some grilled chicken, fish, steak, tempeh, tofu, or simply straight up by the spoonful or grab a big ol’ bag of your favorite chips and go to town baby.
