I don’t know why I do this to myself . . . well I do, because I think these burgers are all kinds of delicious but still . . . sharing a recipe based on tuna makes me all kinds of nervous!
But you guys . . . these spicy, sun-dried tomato and chargrilled red pepper tuna burgers are all kinds of awesome!
They are quick and easy to prepare, seriously healthy, light, fresh, and packed with flavour!
They also happen to be paleo friendly!
I figured you guys might be wanting something a little on the lighter side this week. I know my American friends have just come through a major holiday of feasting aka – Thanksgiving and, the rest of us are gearing up for a massive few weeks of holiday festivities that usually involve an extra decadent indulgence or ten two.
I figured this was the perfect time to share these burgers with you because –
1 – I am head over heels in love with them, I seriously can not get enough.
2 – I don’t know about you but, I love having quick and easy, healthy, delicious meals ready to grab and go, especially when things are crazy busy like I know they are going to be in the next few weeks . . .
There are going to be end of year school/work festivities → Christmas shopping → visiting friends and family → Christmas shopping → decorating → Christmas shopping → meal planning/cooking Christmas treats → Christmas shopping → Christmas crafts with the little lady → Christmas shopping Oh and did I mention the Christmas shopping?! 😉
Busy, busy, busy!
So, having something I can grab and go, that I know it’s good for me and all kinds of delicious = total win!
Today’s recipe for our spicy, sun-dried tomato and chargrilled red pepper tuna burgers totally tick all the boxes for me – they are healthy, cheap, packed with protein and insanely delicious!
They also happen to be super quick easy to prepare. Made with just a handful of all natural, real food ingredients that you probably have tucked away in the back of your pantry already!
All you have to do is throw your ingredients into a bowl, give it a stir then, pop your burgers into the oven and you are good to go! No flipping required baby!
And would you just look at all that flavour flave?!
“I see the flavour you speak of Em but, how do they taste?” I hear you ask . . . well, let me tell you . . .
First up you get that slightly tart tangy tomato, followed by a subtle smoky sweetness from our chargrilled red pepper (capsicum), and last but not least you get a sneaky hit of heat from the chilli . . . so, so good!!
I love to serve these babies on top of a crisp, cool baby cos lettuce leaf (or 2) then top them with a few slices of deliciously creamy avocado, some baby grape tomato slices, a dollop of Greek yoghurt and a sprinkling of fresh coriander (cilantro) Oh, I also like to throw on a few slices of extra chilli if I’m feeling feisty . . . which I often am 😉
The light, crisp, freshness from the lettuce, the creamy avocado, that delicious pop of fresh, sweet, juicy tomato combined with that little dollop of Greek yoghurt really goes so perfectly with the big flavours of our spicy, sun-dried tomato and chargrilled red pepper tuna burgers. The cool and creamy, freshness really helps to balance out the heat from our chilli.
I’m also thinkin’ we could totally make these into mini, bite size burgers (think meatball size) and serve them on a slice of cucumber, with a little avocado, 1/2 a cherry tomato, a dollop of Greek yoghurt and a sprinkling of cilantro (coriander) as a healthy, delicious appetiser/canapé at our holiday parties! Don’t you think?

All natural, quick and easy, seriously healthy, paleo friendly, insanely delicious spicy, sun-dried tomato and chargrilled red pepper tuna burgers that pack a serious flavour punch!
Make them. Eat them. Love, love, love them
Spicy Sun-dried Tomato and Chargrilled Red Pepper Tuna Burgers {Paleo Friendly}
Makes approx 6 sensational, flavour packed, slider size, spicy tomato and tuna burgersIngredients –
1 cup of tuna – I used 4 x individual, 95g cans – drained and rinsed
1 small spanish (red) onion, finely chopped
1 small red chilli, finely chopped (more or less to taste)
2 garlic cloves, crushed
1 egg
2 whole (4 halves) sun-dried tomatoes, finely chopped
1 chargrilled red pepper (capsicum), finely chopped – (I use these Whole, peeled, Fire Roasted Peppers by Always Fresh ♥ )
2 Tablespoons of tomato paste
1 Tablespoon of coconut flour
Salt and pepper to taste
Optional but recommended for serving –
Lettuce
Avocado
Baby grape tomatoes
Fresh coriander (cilantro)
Extra chilli
Greek yoghurt (or sour cream) if not strict paleo
Method –
1 – Pre-heat your oven to 175’C (350’F)
2 – Line a baking tray with baking/parchment paper and set aside.
3 – Place all of your burger ingredients into a medium size bowl and stir until well combined.
4 – Using your hands, carefully roll and flatten your tuna mixture into 6, even (ish) sized burger patties and place onto your prepared baking tray. FYI – I used approx 1/3 cup of mixture per burger.
5 – Place in the oven and cook for 5-10 mins, until set and cooked through.
6 – To serve, place in a lettuce leaf (or 2) top with some freshly sliced avocado, baby grape tomatoes, a dollop of greek yoghurt (if not strict paleo) and sprinkle over some fresh coriander and a few extra slices of chilli.

You would be looking at approx –
70 calories per burger
Fat – 1.5g
Carbs – 4g
Protein – 10
However, that information would depend on the brands and products you use as nutritional info can vary greatly from brand to brand however you could have it calculated more specifically for the products and brands you use easily using free apps-program’s-websites such as my fitness pal (which is what I did quickly for you to get the info above)
