It’s all natural, made with just a handful of ingredients that I bet you have on hand already.
It’s naturally gluten free and paleo friendly.
But most importantly, it packs a serious flavor punch and comes together in a matter of minutes.
Ahhh so much to love I tell you!

It’s been a regular feature on our dinner menu for months now. It just so easy to throw together and is always so happily received which, when you have little ones joining you at the table is reason to celebrate am I right?!
Side not – please tell me I’m not the only one who has a handful of family favorite dinner recipes that get rotated throughout the weeks?!
If it ain’t broke don’t fix it right?!
Anyway . . .
I know, I know I’ve totally been holding out on you, but I’m here now to deliver the goods and deliver I shall!
One bite of your succulent, juicy, balsamic grilled with it’s sweet and spicy strawberry salsa and I know you’ll forgive me for holding onto this delicious little gem of a recipe for so long.
Promise.
Especially when you see how easy it is to make.
All you have to do is pour a little balsamic vinegar over some chicken, add a drizzle of coconut oil, a pinch of salt and pepper and set it aside to marinate for a few minutes.
Easy right?
Once you’re chicken has been infused with that sweet, delicious balsamic glaze pop it into your skillet/fry pan, let it cook for 2-3 minutes each side and you’re pretty much done.
While your chicken is resting you’ll put together your sweet and spicy strawberry salsa and that’s it.
One super simple, seriously flavorsome, delicious, nutritious dinner done in well under 30 minutes!
I love the way the natural sugars in the balsamic vinegar caramelize while it cooks. It gives your chicken this incredible, slightly crisp outer crust that helps to seal in the natural juices of the chicken, which is exactly what we want because, the end result is nothing short of divine.
Seriously succulent, deliciously juicy, light and tender chicken every single time.
No boring, flavorless, dried out chicken breasts on my watch baby!
And then we have our sweet and spicy strawberry salsa . . .
Oh you guys this stuff is so good!
Plump and juicy deliciously sweet strawberries are combined with some Spanish onion, a sprinkling of fresh coriander (cilantro), a cheeky squeeze of fresh lime and one fiery little chili pepper.
And it’s so easy to throw together. Simply chop up your ingredients, pop them in a bowl, give it a little stir and you’re ready to go.
It’s light, fresh, sweet and spicy – a serious little flavor bomb that’s deliciously addictive and totally takes this meal to the next level.
If you are sharing this with little ones or you, yourself aren’t keen on spicy things feel free to leave out to chili, and of course if you are a spice lover feel free to kick things up a notch. It’s totally adaptable, do what you feel just do yourself and your family a favor and make it already I know you are going to love it!

Balsamic Grilled Chicken with Sweet and Spicy Strawberry Salsa {Gluten Free & Paleo Friendly}
Serves 2 – 3
Ingredients –
For the chicken –
250g (8 ounces) boneless, skinless chicken breasts (I used 2 large chicken breasts)
1/4 cup balsamic vinegar + extra for serving
A drizzle of coconut oil, melted and cooled
A pinch of salt and pepper
For the salsa –
1 cup of strawberries, hulled and finely chopped
1/2 small red (Spanish) onion very finely chopped
1 green chili pepper finely chopped – more or less to taste with or without seeds depending on how feisty you’re feeling and how hot you like your salsa
1/4 cup of coriander (cilantro) finely chopped
A squeeze of fresh lime juice – approx 1 tsp
Salt and pepper to taste
Method –
For the Chicken –
1 – Place chicken onto a piece of parchment paper and give it a little pounding with a rolling pin (or implement of choice) to slightly tenderize, flatten out and ensure a thinner and more uniform thickness overall which will result in a quicker and more even cooking.
2 – Pour balsamic vinegar along with coconut oil, salt and pepper into a small bowl (or even just a zip lock bag will work) and give it a little stir/shake to combine.
3 – Place chicken into balsamic mix and set aside for 15 minutes at room temperature to marinate. (while your chicken is marinating go ahead and grab out the ingredients to make the salsa which we will do while our chicken is resting)
4 – Place a large skillet or fry pan over medium heat, add a little extra coconut (or olive oil/ bacon fat or ghee/cooking oil of choice) and cook chicken for 2-3 minutes each side until cooked through.
5 – Remove chicken from heat and set aside to rest while you make your salsa.
To make the salsa –
1 – Place all ingredients into a small bowl and stir to combine.
FYI – It’s fine to make the salsa ahead of time just don’t add the lime juice until a few minutes before you are ready to serve as the acidity from the lime juice can cause the strawberries to break down a little after a few hours 😉
2 – Taste and adjust seasonings if necessary.
To serve –
Simply place a couple of heaping spoonfuls of your sweet and spicy strawberry salsa onto of your succulent, juicy balsamic grilled chicken, drizzle with a little extra balsamic vinegar if desired and serve with a simple salad or your veg of choice.
I highly recommend serving it with some good ol’ fashion green beans, a little avocado and even a sprinkling of feta (like so) if you have it on hand and you’re feeling a little fancy, but do what you feel – make it your own 🙂
