{Sugar Free} Spiced apple and cinnamon muffins, making Monday, or anytime you eat them, all kinds of magical!
Ima keep this short but sweet for you today because;
1 – It’s officially school holidays here which means I can’t really hear myself think and also, I don’t like to be tied to my laptop while the little lady is around. And,
2 – Who wants to listen to (or should I say read) me waffling on when there are muffins to be made!
You guys, these sugar free, spiced apple and cinnamon muffins . . .
I know they don’t really look like much but hear me when I say, they really do taste all kinds of magical!
They are subtly sweet, soft , tender, light, fluffy, super moist (sorry but there really isn’t any other word to describe that texture) perfectly spiced and just all kinds of incredible!
Sweetened naturally with pureed apple, a splash of vanilla and a generous pinch of spices that will warm your soul!
Super simple to make, made with no refined flours or sugars using just a handful of ingredients that I bet you have on hand already and can be ready to devour in less than 20 minutes!
Serve them simply as they are, or with lashings of almond or cashew butter + a vat cup of coffee (green tea / matcha latte or beverage of choice) for the perfect morning treat or afternoon pick me up.
Build yourself an epic breakfast bowl – sugar free spiced apple and cinnamon muffin on top of a big bowl of your fave yogurt (I ♥ vanilla or salted caramel with these babes) , slice some strawberries, sprinkle with some of this glorious pumpkin and cranberry {grain free} granola for a little crunch then, finish with a drizzle with nut butter – heaven in a bowl I tell you!
Or, for the ultimate treat / late night dessert . . .
Serve with a drizzle of salted caramel chocolate . . .
1 bowl + 5 ingredients ( a handful of spices) and 20 minutes and you too could be devouring this deliciousness!

{Sugar Free} Spiced Apple and Cinnamon Muffins
Gluten Free – Dairy Free – Grain Free – Refined Sugar Free – Low Carb – Paleo & Vegan Friendly
Makes 9 soft and tender, subtly sweet, perfectly spiced apple and cinnamon muffins
Ingredients –
For the muffins;
1 cup of apple puree
3 eggs – vegan friends sub your fave egg placers
1/4 cup of almond butter – cashew butter works really well too – I love tahini for a nut free version
1 Tablespoon of vanilla
1/2 cup of coconut flour
1 teaspoon of cinnamon
1/2 teaspoon of ginger
1/4 teaspoon each of nutmeg, cardamom & cloves
1 teaspoon of baking powder
1/2 teaspoon baking soda
Optional add-ins ;
1 teaspoon of maca – for hormone balance
2 Tablespoons of Uplift food – pre-biotics
2 scoops of collagen – for gut healing goodness
1-2 teaspoon of your fave adaptogens – I love to use reishi – to boost immunity, calm the nervous system (and my busy brain!)
Method –
1 – Pre-heat oven to 175’C/350/F
2 – Line a muffin tray with paper cases (or grease well) and set aside.
3 – Whisk together apple puree, eggs, vanilla, baking powder, baking soda and spices (and any extras you’re using) until well combined.
4 – Add coconut flour and stir until well combined.
5 – Scoop batter in to your prepared muffin tray
5 – Bake for 15-20 minutes until the tops spring back when lightly pressed and a tooth pick has just a few moist crumbs attached when inserted into the centre.
6 – Devour!
Note – Cupcakes will keep for 5-7 days in the fridge when covered or stored in an airtight container. Or you can freeze for 3-6 months.

Can you use oatmeal instead of coconut flour? If so, how much should I use?
I havent tested any other flours but if you wanted to try it with oat I would start with 1 cup (you may need to add a little more, maybe up to 1 1/4 cup) of oat flour.
