Allow me to introduce you to my latest obsession . . .
Single serve, salted dark chocolate hazelnut cookies . . .
For those moments when you really want a cookie, which if you’re anything like me is pretty much daily (please tell me I’m not the only one!? ) but you don’t want to bother baking, or can’t be trusted with ( ← we’ve all been there), an entire batch of 12-24.
Actually, the recipe is egg free so technically you don’t even have to bake it if you really don’t want to!
Salted dark chocolate hazelnut cookie dough anyone?!
Come to think of it, most recipes I see seem to make 24-48 cookies which is wonderful if you’re feeding a crowd but if you’re cooking for one, 48, or even “just” 24 cookies is just a bit much.
Yes, I did just say there might possibly be such a thing as too many cookies . . . please don’t hate me, hear me out . . .
You and I both know that nothing and I mean NOTHING compares to that new, new, freshly baked cookie munching experience, am I right?
Come on, you know I am!
Enter 10 minute, mix and make single serve cookies!
You guys, these cookies . . . they pretty much taste like nutella but in cookie form.
Crisp and crunchy (but not too crunchy) on the outside, deliciously buttery on the inside and seriously, seriously chocolaty!
And, finished with a drizzle of dark chocolate and a cheeky pinch of flaky sea salt . . .
This right here is the stuff that dreams are made of!
FRESHLY BAKED, FROM SCRATCH, SINGLE SERVE COOKIES IN LESS THAN 10 MINUTES!!
Mind = blown!

And yes, Im saying cookies, plural . . .
I like to make 3 x 3 bite cookies because who ever eats just one cookie?! But, feel free to make one large or 4 smaller cookies if you prefer #youdoyou just promise me you’ll do yourself a favor and make them, ASAP!

Single Serve Salted Dark Chocolate Hazelnut Cookies
{Gluten Free, Dairy Free, EGG FREE, Grain Free, Refined Sugar Free, Keto, Vegan & Paleo Friendly}Makes 1 serve
Ingredients –
2 Tablespoons of Hazelnut butter
1/2 teaspoon of vanilla
1 teaspoon of vanilla almond milk (or milk or choice)
1 Tablespoon of cacao
2 teaspoons of monk fruit sweetener (or coconut sugar)
1/4-1/2 teaspoons of espresso – Optional to help enhance the richness of the cacao
A pinch of baking soda
A pinch of flaky salt + extra for serving
1-2 squares of your fave dark chocolate + extra for drizzling
Optional add in’s;
Vital proteins unflavored collagen peptides – for gut healing goodness
1 teaspoon of maca – for hormone balance
Method –
1 – Pre-heat oven to 175’C/350’F
2 – Line a baking sheet with baking/parchment paper and set aside.
3 – Place all ingredients into a small bowl and stir to combine.
4 – Use your hands and roll into balls and gently press down into desired shape and size.
Note – make as many or as few as you like. I like to make 3 x 3 bite cookies because who ever eats just one cookie?! But, feel free to make one large or 4 smaller cookies if you like #youdoyou just keep in mind that you may need to adjust the baking time slightly depending on the shape and size you choose
5 – Once you have all your cookies shaped bake for 8-10 minutes until the tops are just set and the edges are slightly crisp.
Note – they will firm up as they cool so be careful not to over-bake.
7 – If you’re going to add the chocolate drizzle simply melt chocolate by your preferred method, drizzle over the top and finish with an extra sprinkling of flaky sea salt if desired.
