Today (at last) I am sharing with you my all-time fave breakfast recipe. Today we are making ourselves some vanilla spiked protein waffles.
Is it breakfast? A snack? Breakfast for dinner? Or even dessert?
The answer my friend is yes, yes, yes and YES!
This recipe is looooonnnnngggg over due. If you follow along with my instagram stories you know I have been making these waffles on the regular for months (and months and months) now if not for breakfast for a mid-morning snack, lunch dessert (how good is lunch dessert?!) or even a cheeky little late night treat.
I figured enough with the teasing already, time to snap a few pics and get this recipe up so because hear me when I say, you need in on this deliciousness!
Light, fluffy, subtly sweet, crispy on the outside, light and fluffy in the middle no one would ever know they also happen to be seriously good for you!
Made with no added sugar, packed with protein and loaded with gut-healing goodness.
The recipe below serves just one but if you’re sharing with your BFF/housemate, significant other or, if you, like me have adorable children (fur kids count too) who love nothing more than to steal our food or if you’re into meal prep, you can easily double, triple or quadruple the recipe.
Just let them cool completely then wrap them in individual servings or toss them in a freezer-safe bag or airtight container (they will keep well in the fridge for at least a week or you can freeze for a good 3-6 months) ready to grab and go in the morning or anytime the waffle craving strikes. Which I guarantee will be a very regular occurrence once you taste these babies!
Can’t stop, won’t stop and I’m not even a little bit sorry about it.
My fave way to eat my vanilla spiked protein waffles is with vanilla greek style yoghurt, some sliced banana, strawberries, blueberries and of course then bathing them in a drizzle of nut butter and maple syrup.
If you like hot/ more savoury breakfast you could totally serve them with a poached egg and a side of bacon, feel free to customise as you see fit just please, please just do yourself a favour and go make these waffles already!
If you don’t happen to have a waffle maker of your own, beg borrow or steal baby! Or you could just make them into pancakes instead. But, as someone who has tried them as both pancakes and waffles, the waffles take the cake! It’s the crispy edges & ridges to store the puddles of syrup for me!
I got my waffle maker super cheap from target, it was like $10 I think I’ve had it for years and let me tell you, it’s 100% without question, money well spent!
Do what you gotta do to get your hands on a waffle maker and get these delicious little vanilla spiked, protein-packed bites of happiness into your life, asap!

Fluffy Vanilla Proteom Waffles
- Cook Time: 10 mins
- Persons: 1
- Difficulty: Easy
- Ingredients
- 1 egg
- 1 scp (30g) Macro Mike Vanilla Buttercream plant based/ almond protein pwd –AMB-EM = 10% off
- 1 Tbsp of tapioca (arrowroot) pwd
- 1 tsp vanilla
- 1/2 tsp baking powder
- A pinch of salt
- 3 Tbsp unsweetened vanilla almond milk
- For serving –
- Sliced banana
- Berries
- For the nut butter drizzle mix –
- 1 Tbsp nut butter !
- 1 Tbsp maple syrup – I use sugar-free monk fruit maple
- Instructions
- Mix it all up
- Cook according to your waffle makers instructions
- Load it up with all of your fave toppings – I love vanilla yoghurt, banana, berries and a drizzle of nut butter syrup + a sprig or two of mint if Im feeling fancy. SO GOOD!!!!
