Single serve double chocolate cinnamon spiced cookies coming in hot, hot, hot!
Because why should Santa be the only one who gets cookies for his troubles?!
I mean, I don’t know about you but I hardly think a bunch of carrots (no matter how many houses that sweet chocolate laden bunny visits) is enough to fuel the epic journey of delivering and hiding all those delicious little chocolate covered treasures?!
Plus, you’re girl here is very much obsessed with making single serve cookies and I’ll use any excuse I can, not that I really need one, to come up with a new flavor combination.
And, it seems like you’re 100% on board this obsession (my tribe ♥ ) because I shared a sneaky snap of these cuties on Instagram when I first made them a few days ago and within minutes I had an overwhelming influx of insistent demands polite requests for the recipe.
Well, ask and you shall receive my friend, what can I say, I aim to please!
And, you were right to promptly request this recipe because these double chocolate cinnamon spiced cookies are sooooo good!
Decadent and rich (but not too rich) crisp and crunchy (but not too crunchy), subtly sweet, deliciously indulgent, seriously chocolaty, perfectly spiced, simply divine!
They’re crispy on the outside, deliciously buttery on the inside spiked with a gentle hum of heart and belly warming cinnamon and that chocolate drizzle . . .

A note on sharing, just quickly for those of you with a keen eye for detail who may have noticed that there are a few extra cookies in these photos than the standard 3 I’d usually have for a single serve cookie recipe, well that’s because I had to double the recipe when I re-made them to photograph because:
1 – its school holidays and nothing is sacred when there are little hands around and
2 – I really wasn’t kidding when I told you how I feel about sharing my food!
1 bowl, 10 minutes – no sharing required!!!

Single Serve, Cinnamon Spiced Double Chocolate Cookies
{Gluten Free, Dairy Free, EGG FREE, Grain Free, Refined Sugar Free, Keto, Vegan & Paleo Friendly}Makes 1 serve of subtly sweet, deliciously indulgent, perfectly spiced, crispy and crunchy (but not too crunchy) salted dark chocolate cookies!
Ingredients –
2 Tablespoons of almond butter
1/2 teaspoon of vanilla
1 Tablespoon of vanilla almond milk (or milk or choice)
2 Tablespoons of cacao
2 teaspoons of monk fruit sweetener (or coconut sugar)
1/4-1/2 a teaspoon of cinnamon – depending on how spicy you like things
1/4-1/2 teaspoons of espresso – Optional to help enhance the richness of the cacao
1/4 teaspoon of baking soda
A pinch of flaky salt + extra for serving
1-2 squares of your fave dark chocolate + extra for drizzling
Optional add in’s;
Vital proteins unflavored collagen peptides – for gut healing goodness
1 teaspoon of maca – for hormone balance
Method –
1 – Pre-heat oven to 175’C/350’F
2 – Line a baking sheet with baking/parchment paper and set aside.
3 – Place all ingredients into a small bowl and stir to combine.
4 – Use your hands and roll into balls and gently press down into desired shape and size.
Note – make as many or as few as you like. I like to make 3 x 3 bite cookies because who ever eats just one cookie?! Feel free to make one large or 2 smaller cookies if you like #youdoyou just keep in mind that you may need to adjust the baking time slightly depending on the shape and size you choose
5 – Once you have all your cookies shaped bake for 6-8 minutes until the tops are just set and the edges are slightly crisp.
Note – they will firm up as they cool so be careful not to over-bake.
7 – If you’re going to add the chocolate drizzle simply melt chocolate by your preferred method, drizzle over the top and finish with an extra sprinkling of flaky sea salt if desired.
