Week.
Says me in the middle of Wednesday!
This week has not started out at all as I intended.
On Monday I woke up with a sore throat, stuffy nose and an achy bod which is never a nice way to wake up let alone on a Monday morning!
And, because of that distraction I feel my brain is a little foggy, I’m having a hard time focusing and everything that I want and need to do is taking way longer than anticipated so now I feel like I’m falling behind!
Thankfully I have some tasty snacks on hand that I can sit and savor for a minute or two while I catch my breath, re-group, re-focus and set a plan for the rest of the week.
Snacks, coffee and chats always make me feel better.
So, let’s talk . . .
Question . . .
Are bliss bites still a thing?
For me I think the answer will always be, YES because you and I both know, your girl loves a snack!
Especially one that takes like a dessert!
And that’s exactly what we have here!
Everything you love about strawberry shortcake all rolled in to one pretty pink bite size packaged – no baking required!
Subtly sweet, deliciously buttery, perfectly spiced bites of blissful deliciousness!
These strawberry shortcake bliss bites are, in fact, so insanely delicious that I would even go as far as saying that if you answered no to my initial question re- bliss bites still being a thing then one bite of these beauties would change your mind. Instantly.
Soft and chewy, deliciously buttery with just the right amount of crunch, a hint of vanilla, strong (but not over-powering) strawberry flavor and a gentle hum of cinnamon . . .
SOOOOO good!
And, would you just look at how pretty they are?!
Made with just a handful of ingredients that I bet you have on hand already – cashews – almonds – dates – freeze dried strawberries – almond butter – vanilla – cinnamon – salt and can be ready to devour in less than 20 minutes!
No whisking, No folding, No cooling, No frosting, Nada !
Simply throw your ingredients in to your trusty ol’ blender or food processor and let it do the work for you!
Now, although they are all kinds of delicious enjoyed simply as they are in all their freshly rolled glory, if you have the time then I strongly suggest you crush up some extra freeze dried strawberries in to a nice, fine looking powder, and while you’re at it, pop some finely shredded coconut into a bowl then . . . roll some of those beautiful, berry-licious bliss bites, in a little of each.
It’s totally not necessary but the contrast in both flavor and texture takes the experience to the next level.
An extra 5 mins but 100% worth it!
Crispy on the outside, soft and chewy in the middle – next level deliciousness my friend! 100% worth it!

Original, strawberry or coconut?!
No Bake, Strawberry Shortcake Bliss Bites
- Prep Time: 10 mins
- Persons: 16+
- Difficulty: Easy
- Ingredients
- 1/2 cup raw almonds
- 1/2 cup raw cashews
- 3/4 cup (approx 8 large) medjool dates – Keto friends see notes*
- 1 cup freeze dried strawberries
- 1 Tablespoon of vanilla
- 2 Tablespoons of almond butter
- 1/2 teaspoon of cinnamon
- A pinch of salt
- Optional add ins;
- 2 scoops of collagen *** adds an extra hit of protein & is great for hair, skin, nails & gut health
- 1-2 Tbsp of protein powder ****
- Optional for serving –
- Freeze dried strawberries, crushed to powder
- Finely shredded coconut flakes
- Instructions
- Optional but highly (HIGHLY) recommended – Place your almonds and cashews on to a lined baking tray and roast at 175’C/350’F for 5-10 mins until lightly toasted, gloriously golden and deliciously fragrant.
- Once toasted, place your nuts into your food processor/blender and pulse until crumbly, you want there to still be a few bigger chunks to give the bites some nice texture.
- Add dates and process until the mixture starts to come together into a sticky “dough”.
- Add vanilla, cinnamon, salt along with collagen & protein pwd (if using) then process again until combined.
- Add freeze dried strawberries and process again to combine.
- Using your hands, roll approx 1 small Tablespoons worth of dough into bite size balls then set aside

FYI – I like to make my bites on the smaller side. You would probably need 3 of mine to make up one of those golf ball size bites you buy at cafe’s or in stores. - If you are going to coat your bliss bites simply place your strawberry powder & coconut into a small bowl or zip lock bag and gentle press/shake until nicely coated. Store in the fridge until ready to serve.

Notes –
* Keto/ low carb lovin’ friends & those of you who have trouble digestive dates – soak/ferment your dates in coconut water keifr or kombucha overnight and you should be ready to roll. How you ask?! Well, apparenely adding beneficial bacteria to them in the way of coconut yoghurt or coconut kefir or kombucha removes all the sugar in the fruit! You cab read more about how/why it works here
** if your dates are a little dry/ you’re not using fresh juicy dates (or fermenting them first), soak in boiling water for 10 mins to help re hydrate them & bring them back to life. Then just drain & proceed with the recipe as written.
