And just like that, March is upon us!
Can you even believe it?!
I know I lost a month with you while my laptop out of action pretty much all of February but man is this year flying!
Sloooowwwwww down 2019! Why in such a rush?!
Although, the fact that it’s now March means that tomorrow (nothing like a little last minute inspo) is pancake Tuesday!
Not an occasion I usually celebrate or remember but this year I’m (a day) a head of the game!
And, I’m always up for pancakes!
Although they’re not something I make very often, because all that whisking, standing and flipping . . . so I usually save them for a special occasion but when I make them, oh do I enjoyed them!
I made them for my little lady and I as a special treat for Valentines Day and have been dreaming about them ever since!
So, today I thought I would share with you my healthier twist on one of my childhood faves.
Quick and easy, light and fluffy basic vanilla pancakes.
Made with just a handful of ingredients that I bet you have on hand already and come together in a matter of minutes!
This recipe is so basic and totally customizable so feel free simply use it as a guide and throw in any extra to make it your own.
Add in a handful of blueberries or some choc chips if your feeling fancy, however you choose to make them you really can’t go wrong!
Yes you will still have to stand and flip but no whisking and, this recipe makes a smaller batch – enough to serve just two (or 3 if you add some extra sides like eggs & bacon) so you won’t be standing over the stove for hours on end but, I promise they will be 100% worth your time!
Light, fluffy, subtly sweet, crispy on the edges, soft and tender in the middle, spiked with just a hint of vanilla.
Soooooo good!
Serve them simply as they are or load them up with all of the things!
My fave way to enjoy them is with a dollop of vanilla coconut (or Greek style yogurt) , topped with strawberries, banana, a sprinkling of black forest granola (or even just cacao nibs) for some extra crunch, a drizzle of almond butter & real deal maple syrup!
Or sometimes just with a sprinkling of monk fruit sweetener & a squeeze of lemon!
OooOOOO yes!

Gluten Free – Dairy Free – Grain Free – Refined Sugar Free – Paleo & Vegan friendly

Basic Fluffy Vanilla Pancakes for Two
{Paleo – Gluten Free – Dairy Free – Sugar Free}Makes 4-8 subtly sweet, deliciously nourishing, hearty, healthy, vanilla spiked pancakes.
Ingredients –
2 eggs – Vegan friends sub your fave egg replacer
1 cup plain flour – I like to use cassava flour (or Bob Red Mil’s 1:1 GF flour blend) to keep them gluten & grain free
1 cup vanilla almond milk (or milk of choice)
2 teaspoons of vanilla
1 Tablespoon of monk fruit sweetener (or coconut sugar) – optional
1 squeeze of lemon juice
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1 pinch of salt
Optional add-ins
1 teaspoon of maca – for hormone balance
1-2 Tbsp Hemp seeds – Plant based protein, omega 3’s, vitamins, minerals & essential amino acids – I love My Hemple – EMSWAN10 = 10% off
1-2 scoops of Vital proteins unflavored collagen peptides – for an extra boost of protein and gut healing goodness
1 scp protein powder – for extra protein (vanilla or unflavored would work best in this recipe) – I use Proganics Vanilla whey – you can use EMS10 to get 10% off – If adding protein powder you may want to add an extra 1/4 cup water
Up to 1 Tablespoon of MCT oil – brain boosting energy
Method –
1 – Place all ingredients in to your food processor or blender and process until smooth, creamy and well combined.
You can whisk by hand but this is much faster and I find the batter gets extra light and fluffy this way.
2 – Cook over medium/low heat in a lightly greased fry pan or skillet (I like to use coconut oil or ghee for extra flavor) for 2-3 minutes per side until the edges look dry and bubbles appear on the top.
3 – Flip and cook for 1-2 minutes longer.
4 – Repeat until all pancake mix has been used.
5 – To serve – top with toppings of choice – I like to use coconut yogurt, strawberries, banana , this black forest granola (or just cacao nibs) almond butter and maple syrup.
