You guys . . . this 5 minute zucchini pho is pretty much my food philosophy served up in one pretty little bowl!

Proof that healthy eating can be both incredibly simple, seriously flavorful and deliciously nourishing at the same time.
In all honesty I wasn’t even planning to share this recipe because it’s just so simple, you know?!
But, then I decided that, simple though it may be, this pho is way to tasty to keep to myself, it really is feel good food at it’s finest and I just had to share it with my sweet internet BFF.
When I said it’s super simple to make I really wasn’t kidding. Heat broth & pre-cooked protein – pour over a mountain of veggies – devour.
5 main ingredients, 5 minutes in the making – what’s not to love!?
Feel free to change up the flavors to suit whatever spices/broth/protein/veggies that your craving or have on hand.
You can bulk it out and build it up will allllll of the veggies and allllll of the toppings or stripppp it waaaaayyyy back and eat it as I’ve served it here – in all it’s unadorned, super simple, minimalist-ic glory – either way it’s 100% delicious and hope you love it as much as I do.

5 Minute Curry Chicken Zucchini Pho
{Low Carb – Gluten Free – Dairy Free – Keto – Paleo}Makes 1 serve of quick and easy, heart, healthy, deliciously nourishing pho
Ingredients –
1/2-1 cup cooked chicken
1 heaping teaspoon of Meadow & Marrow Bone Broths curry concentrate +
1 cup of water – sub 1 cup of your fave broth + curry paste/ powder if you like
1 Tablespoon of coconut oil or ghee
A big handful of spinach
A mountain of zucchini noodles (1-2 zucchini spiralized of sliced into ribbons with a vegetable peeler)
1/4 cup of finely shredded purple/red cabbage
1/2 an avocado
Chili
A wedge of lime +
Coriander/cilantro
Sunflower seeds
Salt and pepper to taste
1 scoop of Vital proteins unflavored collagen peptides – optional – for protein and gut healing goodness
Method –
1 – Place chicken, broth, water and ghee into a pot and stir to combine.
2 – Place zucchini noodles, spinach, cabbage and avocado into large bowl and set aside.
3 – Once your chicken/broth is heated through, pour over spinach/zucchini/avocado
4 – To serve – sprinkle with chili, coriander/cilantro, sunflower seeds and freshly ground black pepper
