Nothing says comfort like a chocolate chip cookie right? For most of us it transports us straight back to childhood. After walking in the door from school and throwing your heavy bag aside… was there anything better than the days there were cookies waiting for you in place of that trusty apple?
A good chocolate chip cookie along with a tall glass of ice cold milk in the summer or in the winter (the grown up version) teamed with a hot cup of coffee or tea…or hot chocolate if your really going all out ;). Crunchy on the outside but soft almost fudge like inside with wonderful gems of chocolate chip in every bite. YUM!
When I saw this recipe over at two peas & their pod’s website I just had to try it out. These chocolate chip cookies are like the ultimate, the king (or Queen of chocolate chip cookies)! Not only do they combine both white and milk chocolate chips they have chopped up Oreos in them as well! Is that really necessary? I hear you ask, yes my friend I think it is 🙂
Oh and they smell divine, even before they are in the oven baking, the batter smells amazing.
Try it for yourself, I know you want to 🙂
Seriously Indulgent chocolate chip cookies
Ingredients –
2 1/2 cups plain flour
1 tsp baking soda
1/4 tsp salt
3/4 cup cocoa powder
1 cup of unsalted butter (at room temp)
1 cup white sugar
1 cup brown sugar
2 eggs
2 tsp vanilla
1 cup milk chocolate chips, chopped
1 cup white chocolate chips, chopped
1 cup Oero’s, chopped (about 10 cookies)
Method –
Preheat oven to 190’C (375’F)
Sift flour, baking soda, cocoa and salt together into a medium sized bowl and set aside.
In a large bowl, place butter (I find it easier to chop it up a bit first, it seems to mix a little easier this way) and sugars …
and beat with an electric mixer until creamy, smooth and well combined.
Add one egg and whisk until well combined, then add the remaining egg and repeat. Oh and don’t panic if the batter seems to congregate within the safety of the beaters, this happened to me (shown clearly in photos above and below :)) all will work out in the end, I promise 🙂
Add vanilla and mix well.
Gradually (in 3-4 additions) add your flour/cocoa mix,
beating well after each addition.
and now for the main event…
its time to chop up your chocolate chips and Oreos…
add the delicious, glorious gems of chocolate chips and Oreos
stir by hand with a spoon (or your utensil of choice) until the batter looks like it has an even distribution of chocolate chips and Oreo chunks…..each cookie needs it fair share right? 😉
and here comes the fun part where you get to get your hands all dirty. Take small handfuls of batter and roll them into little balls then place them on your baking trays/cookie sheets about 2 inches apart.
Bake for 8-10 mins (mine were all ready to come out at 8 mins but your oven might be a little different). They should look slightly under done as your remove them from the oven.
Leave them on the tray for 5 mins and let them cool. In this time they will “set/firm up” to perfection.
Transfer to wire rack to allow to cool (if you can restrain yourself long enough)
…I totally…
…understand…
🙂 😉 🙂
