So it’s been very cold, wet and rainy here in good ol’ sydney town.
Like really, really cold.
We thought you could do with a sprinkle of sunshine . . . in the form of a donut.
It’s because I love food you . . . I thought I’d share 🙂
Now, I should tell you that I have had my eye on these babies since I first spied them when stalking casually browsing the delicious pages over at How Sweet Eats. I have been wanting to make them forever but something kept distracting me . . . manky over ripe bananas . . . special birthdays . . . more manky over ripe banans . . . requests from my little lady . . . and manky over ripe bananas again . . . until now.
Nothing was going to stop me!
And boy were they worth the wait . . . well actually I’m a little cranky I waited so long . . . I could have been devouring these delicious little donuts for months now!
Seriously soft donuts with the subtle, traditional chocolatey flavour that is red velvety goodness . . . and then you add the frosting!
Ummmm ohmyword this frosting! Slightly adapted from this recipe we used when replicating Jessica’s Banana snack cake .
I honestly have no words.
Make these donuts! Like now! And make sure you stop by How Sweet Eats while your enjoying them.
If you don’t have a donut pan you could just bake them as muffins instead . . . whatever you do, do yourself a favour and make these already!
Baked Red Velvet Cake Doughnuts with Whipped Vanilla Cream Cheese Frosting
Very Slightly adapted from this recipe at How Sweet Eats
Makes 12 donutsIngredients –
1 cup plain flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons cocoa powder
1/3 cup sugar
1 egg
1/3 cup milk (I use Skim)
2 tablespoons unsalted butter, at room temperature
1 teaspoon vanilla extract
3/4 teaspoon white vinegar
1/2 teaspoon baking soda
1/2 teaspoon red food colouringFor the Frosting –
1/4 cup cream cheese, at room temperature
1 teaspoon vanilla extract
1/4 cup powdered sugar
2 tablespoons whipped cream (I use Dream Whip)Method –
Preheat oven to 175’C (350’F)
Sift Flour, cocoa, sugar, salt and baking powder into a medium size bowl.
Add milk,
followed by the egg,
then butter.
Stir until just combined and set aside.
In a small bowl add baking soda,
then vinegar (it will get a funky fizz on, don’t freak out . . . it’s all part of the process baby, go with it ;))
Next add vanilla,
and red food colouring and stir to combine.
Add red vinegar mix to donut batter
and stir until combined.
Fill your donut pan about 2/3 full
and bake for 8-10 mins. Allow to cool in the pan fir 5 mins before transferring to a wire rack to cool completely.
While your donuts are cooling . . . make the frosting.
Put your softened cream cheese into a medium size bowl and beat for 2-3 mins until nice and smooth.
Sift in the icing sugar
then add vanilla and beat until well combined.
Add whipped cream/Dream Whip
and carefully fold until well combined then transfer to a small bowl
Once your donuts have completely cooled frost as you see fit . . . I chose to face plant myself mine directly into the mini bowl of deliciousness that is the whipped vanilla frosting . . .

once all donuts are frosted . . .
add a generous sprinkling of 100’s and 1000’s or whatever sprinkles tickle your fancy.
Close your eyes, take a bite and enjoy the little piece of heaven you have in your hot little hand.
