OK so I figure with just over 4 weeks until Christmas I need to start getting myself organised.
I love making christmas treats to give to friends and family over the holidays, I also love having them on hand for randomly stuffing into my face unexpected visitors. It’s good to be prepared right?
Every year I make our fave mini fruit mince pies and of course it’s not christmas without home made peanut butter cups oh and last year we added that ah-mazing spicy brittled peanuts into the mix.
This year we are making super simple, secretly healthy Peanut Butter Cocoa Fudge Truffles.
These bad boys are so quick and easy to make its kinda ridiculous.
5 ingredients, one bowl and you are ready to rock and roll.
Literally.
Simply throw your ingredients into a small bowl, stir it all together, let your fudge chill for a few mins then – scoop, roll and you are done! Unless you want to add some sprinkles, or in my case glitter which of course is totally optional (←but not really)
Peanut Butter Cocoa Fudge Truffles ready and waiting.
These teeny tiny fudgey little truffles are are tiny but mighty my friend.
Smooth and creamy ultra fudgey little truffles with a seriously strong peanut butter flavour, sweetened naturally with a splash of vanilla and little maple syrup and just the perfect amount of delicious, cocoa, chocolately goodness. So, so good.
And when I say fudge truffles I mean F-U-D-G-E.
I’m talking stick to the roof of your mouth fudgey.
Like when you eat a big ol’ spoonful (or 10) straight from the jar and you need a nice cold glass of milk to help wash it all down . . . yeah baby that’s what I’m talking about. Fudge city! ♥
These little truffles may be teeny tiny but they pack such an intense, sweet little, cocoa flavoured, peanut butter powered flavour punch it’s slightly out of control.
So grab yourself a nice tall glass of ice cold milk and go make these truffles already.

Peanut Butter Cocoa Fudge Truffles
Makes approx 30 tiny but mighty indulgent little super fudgey trufflesIngredients –
1/2 cup natural peanut butter (PB2 works too)
1 teaspoon of vanilla extract
1 Tablespoon of maple syrup
1 Tablespoon of cocoa powder (I use Hershey’s special Dark)
1 teaspoon of coconut oil, melted and cooled.
Optional –
Edible glitter or sprinkles for decorating. You could also roll your truffles in extra cocoa powder, crushed peanuts or leave them naked, as they are in all they fudgey, delicious glory – whatever your little heart desires
Method –
1 – In a small bowl combine all ingredients and gently stir until smooth and well combined.
2 – Taste and add more vanilla/maple syrup if you prefer your truffles a little sweeter.
3 – Place in the fridge or freezer for 20-30 mins to allow the mixture to firm up slightly so its easier to scoop and roll.
4 – While your truffle dough (?) is setting, line a tray with baking/parchment paper and set aside. Also prepare your option decorating glitter/sprinkles/cocoa etc if using.
5 – Take approx 1 teaspoon of truffle dough and gently roll between the palms of your hands to form neat little round truffles and set aside on your prepared/lined tray and repeat until all dough has been used. If you are not decorating or devouring right away store in the fridge or freezer until ready to be enjoyed.
6 – If ready to inhale and want to get your glitter on now is the time to sprinkle over your edible glitter or gently roll in sprinkles/cocoa/peanuts.
7 – Store any left over truffles in the fridge or freezer.
