Here I sit . . . in my wonderful hotel room in desperate need of cake.
Ummm – One problem . . . no oven!!!
What do you do????
Cry? I may have for a new minutes . . . after a 14 hour flight with a 2 1/2 year old who some how managed to sleep a total of you guessed it – 1 hour!
Ummm what?!
No kidding!
Somehow I manage to recall a recipe discovered in the pages of Steph’s Bite by Bite (bless her beautiful heart for sharing such a wonderful jetlag saving bowl of deliciousness) I had stashed away in case of such an emergency.
Seriously, from now on I will be sure I have a packet cake mix in my pantry at home.
If you know whats good for you, you should do the same.
I mean it!
Delicious single serve cake made with 3 ingredients, in 2 mins . . . there is nothing more to say really . . . well apart from,
umm yes please, do want!!!!!
International Emergency Cake –
This recipe from Steph’s BIte by Bite – Serves 1
Ingredients –
5 Tbsp any packet cake mix (I used Duncan Hines Red Velvet Cake mix but just use whatever you can get your cake loving hands on)
1 egg white
1 Tbsp apple puree (apple sauce)
Method –
Collect your massive list of ingredients
In a small mug or bowl put your cake mix
Then add your egg white
The finally your apple puree/sauce
Mix until well combined
Put it into your microwave for 2 mins . . .
tah-dah,
done!
Top with whipped cream (or cool whip/dream whip)
and of course chocolate topping if you can get some.
Sit back, take a deep breath and a big ol’ spoonful and enjoy.
