So remember a few weeks ago when we made those seriously delicious, all kinds of healthy and dangerously addictive (or is it addicting?) Cookie Dough Bites?
Of course you do, how could you not. They were ridiculously good (even if I do say so myself).
And because your crazy cool and super smart you had to know there would be a few variations in the pipeline. Why do people say “in the pipeline” anyway?

Variations . . . delicious, delicious variations.
Variations containing just a Tablespoon or 2 of intense, chocolately, cocoa powdered goodness send these Healthy No-Bake Double Chocolate Cookie Dough Bites straight to first place, front and centre as my all time, hands down, current favourite!
I mean come on now, a healthy, bite size, double chocolate snack that can help get you through that mid morning slump, dreaded afternoon 330itis or be your pre/post workout secret weapon – just yes!
You and I both know you are going to workout twice as hard knowing you have one of these delicious little chocolate bites waiting to reward you (and of course aide in your all important muscle regrowth and repair) after for all your hard work in the gym.
Sprinkles optional . . . but not really
A decadent, indulgent healthy treat minus the guilt or post sugar come down . . . get on it!
Healthy No-Bake Double Chocolate Cookie Dough Bites
Makes approx 37 intensely chocolatey, totally healthy bites of deliciousnessIngredients –
1 cup raw cashews
1/2 cup rolled oats (I used regular rolled oats not quick/instant)
2 Tablespoons of cocoa powder (I use Hershey’s Special dark)
1 Tablespoon maple syrup (the real stuff)
2 teaspoon of vanilla extract
1 good pinch of salt flakes
2 Tablespoons of dark chocolate chips
Method –
1 – Place cashews and oats in your blender or food processor and pulse until they are a fine powder.
2 – add maple syrup, vanilla, cocoa powder and salt flakes and pulse until combined. Mixture will come together into a sticky looking kind of “dough”
3 – Add chocolate chips and either pulse again until just combined or just stir through by hand. If the mix is a little dry add a teeny tiny splash of water, just enough to bring it together.
4 – Using roughly a tablespoon of batter at a time, roll into bite size balls and transfer directly into your mouth an air tight container and store in the fridge. FYI – these delicious little morsels can also be kept in the freezer.
