So a few days ago I got this massive craving for apple pie.

Like  M-A-S-S-I-V-E!

A nice buttery pie crust with subtly sweet apples and that gentle, heart warming hum of cinnamon . . . WANT!!

But, with all the baking I was doing for a certain young lady’s big 5th birthday ain’t no way I had time to bake myself a pie as well. Rolling out pastry, chill in the dough then baking that bad boy . . .  Ain’t nobody got time for that!!

And then it hit me . . . healthy, no-bake apple pie energy bites!

A handful of all natural ingredients, 5 minutes in your food processor or blender and 5 mins to roll into delicious little bite size servings of clean eating, guilt free, energy boosting apple pie!

Healthy, No-Bake Apple Pie Energy Bites

Buttery cashews are combined with naturally sweet, deliciously chewy, caramel infused, medjool dates, a splash of vanilla, a sprinkling of cinnamon. Add in a tablespoon of apple puree (apple sauce) and a handful of freeze dried apples to bring you all those classic, comforting, heart and soul warming apple pie flavours we know and love.

Minus the whole messing with pastry thing. No muss no fuss baby, love, love, love it!

I love how the freeze dried apples give our apple pie energy bites a nice little crunch, total texture lovers dream.

And because they are all natural and seriously healthy these no-bake apple pie energy bites are perfect for anytime of day.

Healthy, No-Bake Apple Pie Energy Bites

Healthy, No-Bake Apple Pie Energy Bites
Makes approx 40 totally healthy, subtly sweet, cinnamon spiked bites of energy packed, guilt free apple pie

Ingredients –

1 cup cashews (I used raw, unsalted)

6 medjool dates, pits removed

1 teaspoon of vanilla extract

1 Tablespoon of apple puree (apple sauce)

1/2 teaspoon of ground cinnamon

1/2 cup of freeze dried apples

a pinch of salt flakes

Method –

1 – Place cashews in your food processor/blender and pulse until crumbly, you want there to still be a few bigger chunks to give the bites some nice texture.

2 – Add dates and pules until the mixture starts to come together into a sticky “dough”.

3 – Add vanilla extract, apple puree (apple sauce), cinnamon and salt flakes and pulse again until combined.

4 – Add your dried apples and pulse until just combined.

5 – Using your hands, roll approx 1 heaping teaspoon of cookie dough into little bite size balls then transfer directly into your pretty little pie hole, or store in an airtight container (or even just a ziplock bag) in the fridge required ← that’s right, I said required. These bad boys are a need, not want people!
