Let me introduce you to the prettiest (and most delicious) little cold and flu fighter I know.
I don’t know what it is but when I’m sick I struggle to drink water.
Like really, really struggle.
Doesn’t matter how ice cold the water is, I just can’t do it. The taste, the texture . . . just no.
All I want to do is drink soda and hot tea.
There is nothing wrong with indulging in a little soda now and then, I personally love me a good soda. Those sweet bubbles and fizz just hit all the right spots on the way down. MmmmMM bubbleicious! However, I have also been seriously addicted to soda. In a big, huge, scary way. Um soda for breakfast? Yep, I was that girl.
I am proud to say I have cut back on my soda drinking big time. Not because I don’t want to drink it, (I totally do) but because it’s really just not very good for me. It doesn’t hold any nutritional value and well to be honest, if I don’t want my little lady to have any then it’s probably best I lead by example right?!
So, as appealing as diving head first into a big ol’ swimming pool filled with sweet, bubbly, refreshing soda sounds to me right now (← ok maybe not quite but you get my point) I just ain’t going go there.
And it’s wayyyyy to hot for tea, ugh enough with this horrid humidity already bring on with autumn/winter!!!!!
So what’s a girl to do?!
She goes and makes her very own all natural, subtly sweet, citrus infused, seriously pretty, flu fighting iced tea that’s what.
You guys this tea is so refreshing. It totally hits and soothes all the right (sore, achey, itchy) throat spots on the way down.
The tea itself is slightly sweet (and all kinds of delicious) it’s by far the best tasting echinacea tea we have tried and I’m pretty sure we have tried them all!
The lime juice cuts through the sweetness of the tea so perfectly and the mint leaves add an incredible freshness. So, so good!
So brew yourself a big ol cup, stir in some stevia or a teaspoon of sugar if you want a little extra sweetness then pop it in the fridge and let it cool completely. Pour your chilled tea over a big ol’ cup (or jar) full of ice, squeeze in some fresh, zesty lime juice, throw in a fresh mint leaf or two, close your eyes and have yourself a soothing, sweet, refreshing (well earned) tropical island getaway.

PS – you can totally add in some sparking mineral water to recreate that faux soda bubbleicious deliciousness #justsayin
Echinacea, Mint and Lime Iced Tea
Makes 1 large or 2 small cool, and refreshingly sweet cups of iced teaIngredients –
1 Echinacea tea bag (I use Dr Stuarts but you could sub for your fave brand)
1-2 cups of boiling water
Juice of a 1/2 a lime
1 – 2 sprigs of fresh Mint
1 cup of ice
1 sachet of stevia (or sweetener of choice) – optional
Method –
1 – Fill and boil your kettle
2 – Place tea bag in a large mug or heat proof jug.
3 – Pour in as much boiling water as your little heart desires
4 – Add stevia (or sugar), stir to combine and set aside to cool.
5 – Once your tea has cooled give it a little stir then grab a nice, pretty little glass and fill it with ice
6 – Pour your cooled tea into your ice filled glass, squeeze in your lime juice and add your sprigs of mint and skull that bad boy like the thirsty little nerd you are, and by you I mean me 🙂
